Healthy Grilled Peach Crostini

Grilled Peach Crostini made with Greek yogurt, Feta cheese, honey and lemon makes a healthy, delicious appetizer.

We love grilled peaches; especially in the Summer when they're at their peak. Peaches are delicious and so refreshing, so I wanted to make a new appetizer and came up with these Grilled Peach Crostini. 

This recipe makes 12 crostini and was so light and refreshing; perfect for a quick snack or entertaining! 

What is Crostini?

In our house, we use the term bruschetta and crostini interchangeably. Crostini is an Italian appetizer which consists of toasted bread and toppings.

You can top them with cheese, meat, vegetables or condiments. 

Some of our favorite ways to top crostini are with tomatoes and basil, eggplant caponata and olive tapenade.

They're great to serve at gatherings and this one made with grilled peaches is also healthier as an added bonus.

Equipment

  • Small Bowl or Mini Food Processor
  • Nonstick Grill Pan: Because the peach slices are small, using an outdoor grill might be cumbersome as the pieces might fall through the cracks. I used an indoor grill pan, but you could also use a panini/grill press. 
  • Serving Platter
  • Honey Drizzler: You don't actually need one, but we recently went to a wedding and they had jars of honey with one at each seat. They were adorable and come in handy!

Ingredients Needed

For this recipe you'll need the following ingredients: 

Fresh Peaches: Rinse your peaches gently under cold water to remove any excess dirt. If you're concerned about possible bacteria, you can combine 1 cup of cold water + ½ cup distilled white vinegar; then add the peaches and swish them around for a few seconds.

Remove them; then rinse under cold water. Dry the peaches on paper towels or a clean dish cloth. Next, you'll want to slice the peach into wedges by cutting the peach in half, removing the pit; then cut into 6 wedges per half. 

Plain Greek Yogurt: I used 2% fat Fage Greek Plain Yogurt

Crumbled Feta Cheese

Honey

Lemon Zest

Toast Rounds: You can usually purchase these already made in the bakery section of your local grocery store. Or you can make your own by slicing a loaf of French bread into ½-inch thick rounds. There are two options to cooking:

  1. Spray the tops with cooking spray; then bake in a 425 degree F oven for 5-7 minutes. 
  2. Drizzle with a bit of olive oil and cook on a grill pan or grill for a few minutes until you get char lines. 

Chopped Fresh Mint: This was used as a garnish, but I highly recommend because it really added a nice flavor contrast!

How do you make Grilled Peach Crostini?

In a small bowl, combine the yogurt, feta, lemon zest and honey; mix well and set aside. You can also place all ingredients in a mini food processor and pulse until smooth.

Preheat the grill pan to medium heat; then add the peach slices and drizzle with a little olive oil. 

Grill the peaches, flipping halfway, 3-4 minutes until they are charred. Place the toast rounds on a serving platter, add a dollop of the whipped feta; then top with the peaches.

Repeat for all toast rounds; then drizzle honey on top of each crostini and top with chopped fresh mint as a garnish. Serve immediately.

Make Ahead Instructions

Once assembled, this  Grilled Peach Crostini will not hold up well stored in the refrigerator, so I recommend making this appetizer no more than 1 hour before you're ready to serve. 

However, you can make each part separately and store for up to 2 days before assembling. 

  • Toast Rounds-Once completely cooled, you can store in an airtight resealable bag on the counter. 
  • Whipped Feta-You can combine all of the ingredients and store in a sealed container in the refrigerator until ready to assemble
  • Peaches-Can be grilled, cooled completely; then stored in an airtight container in the refrigerator. Since they only take a few minutes to grill, I do recommend you grill these right before serving so they're a bit warm.

Ingredients
  

  • 2 whole peaches (pit removed; sliced into 24 pieces)
  • drizzle extra virgin olive oil
  • ½ cup plain greek yogurt
  • ⅓ cup crumbled feta cheese
  • 3 tablespoons honey (plus extra for drizzle)
  • 2 teaspoons lemon zest
  • 12 slices toasted bread rounds
  • 2 tablespoons chopped fresh mint

Instructions
 

  • Add the yogurt, feta, lemon zest and honey to a mini food processor; then pulse until smooth.
  • Preheat the grill pan to medium heat; then add the peach slices and drizzle with a little olive oil.
  • Grill the peaches, flipping halfway, 3-4 minutes until they are charred. Place the toast rounds on a serving platter, add a dollop of the whipped feta; then top with the peaches.
