Reuben Nachos: Perfect for Game Day Snacking!

Reuben Nachos made with lean corned beef, sauerkraut and Swiss cheese topped with Thousand Island Dressing make the perfect game day snack.

It's officially football season and with that comes rooting for your favorite team while eating game day snacks. These Reuben Nachos can be made and enjoyed all year round. 

Originally, nachos were made with melted cheese, guacamole, salsa, refried beans, sour cream and jalepeno peppers. Today, there are many different varieties, but all include some sort of cheese on top of corn tortilla chips. 

One of our favorites are these Italian nachos with ground Italian sausage, but I have to say these Reuben Nachos are also a new hit! 

What is great about nachos is that they make a tasty, quick snack and this recipe can be ready in about 30 minutes. ~Enjoy!

Ingredients Needed

To make this recipe you're going to need the following ingredients: 

Tortilla Chips: You can use any variety of your favorite corn tortilla chips

Diced Corned Beef: If you don't have any leftover corned beef, you can easily go to the deli counter at your local market and order a piece that you can dice. 

Sauerkraut: You'll want to rinse, drain and pat dry the sauerkraut before adding to the nachos so they don't get too soggy. 

Diced Swiss Cheese: Reubens traditionally use Swiss cheese, but you can substitute any cheese you like though it may alter the flavor. 

Thousand Island Dressing: Russian dressing can be substituted.

Scallions (optional garnish)

How do you make Reuben Nachos?

Start by preheating the oven to 350 degree F; then gather your ingredients. Rinse, drain and pat dry the sauerkraut; then dice the corned beef and Swiss cheese. 

Line the sheet pan with the tortilla chips; then cover the top with the sauerkraut, corned beef and Swiss cheese.

Place the sheet pan in the oven and bake 15-20 minutes until the cheese has melted and is hot and bubbly. 

Remove the pan from the oven and drizzle the the Thousand Island Dressing on top along with the chopped scallions. 

Serve immediately while they're still piping hot!

  • 1 cup diced corned beef
  • ½ cup sauerkraut
  • 1 cup diced swiss cheese
  • ¼ cup thousand island dressing
  • (optional garnish) chopped scallions

  • Start by preheating the oven to 350 degree F; then gather your ingredients.
  • Rinse, drain and pat dry the sauerkraut; then dice the corned beef and Swiss cheese.
