To make this stuffed chicken you're going to need the following ingredients:
Boneless Chicken Breasts: Thin sliced chicken breasts are best in this recipe because they're already individually portioned into 4 to 6-ounce slices. If you can't find them already sliced, you can use a whole boneless chicken breast and slice it as thin as you can horizontally.
Sun Dried Tomatoes: Use fresh chopped sun dried tomatoes, not those already in oil.
Spinach: I used fresh spinach, but you can substitute frozen chopped spinach that has been defrosted and drained.
Goat Cheese: You can use crumbled or slices of Goat cheese in this recipe.
Minced Garlic

Balsamic Glaze (optional for drizzle): I added a bit of glaze to the top of the chicken before baking, but you can leave it off.

Add the spinach, chopped sun dried tomatoes and garlic to a mini food processor; then blend together to form the filling.
How do you make Stuffed Chicken?
Start by preheating the oven to 375 degrees F; then spray a 9x13-inch casserole dish with cooking spray.
Place the chicken slice on a clean surface, like a large cutting board; then top each with some of the prepared filling.
Add approximately 1 tablespoon of Goat cheese to the top; then roll up the chicken and place seam side down in the casserole dish. Repeat for all pieces of chicken until they've all been stuffed.
Next, spray the top of the chicken with cooking spray and season with salt and pepper. If you'd like, you can also add some balsamic glaze to the top as well at this point.
Place the dish into the oven and cook 25-30 minutes until a meat thermometer inserted into the chicken has a reading of 165 degrees F (74 degrees C).
