This Tomato, Cucumber & Avocado salad is so light and flavorful you'll want to make it again and again.

Recently we ate at a local Italian restaurant and ordered their tomato, cucumber and avocado salad. The salad was fantastic and beautifully presented.

It was made with finely chopped tomatoes, English cucumbers and fresh, ripe avocado that was formed into a mold; then plated over fresh greens.

Since it tasted a lot like guacamole, but the addition of cucumbers gave it a crunchy texture, I just had to make it myself!
