This Tomato, Cucumber & Avocado Salad made with ripe avocado, garden fresh tomatoes and cucumbers is so light and flavorful you’ll want to make it again and again.
Recently I ate out a local Italian restaurant and ordered their tomato, cucumber and avocado salad as a starter to my meal. The salad was fantastic and beautifully presented.
It was made with finely chopped tomatoes, English cucumbers and fresh, ripe avocado that was formed into a mold; then plated over fresh greens. I just had to make it myself as it tasted a lot like guacamole, but the addition of cucumbers gave it a crunchy texture.
I just love trying new salad recipes; especially ones with a slight twist on original favorites. I actually made this Tomato, Cucumber & Avocado Salad twice so far. Once by cutting the pieces larger and then again chopped up a little smaller.

Tomato, Cucumber and Avocado Salad
Ingredients
- 2 small tomatoes, diced
- 1 english cucumber, diced
- 2 avocado, diced
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Combine al ingredients in a bowl and mix well. Keep refrigerated until ready to serve.
