Everyone seems to have their own favorite banana bread recipe. But I guarantee that you're going to love this one made with a secret ingredient that makes it extra moist. Pudding!
I first created this recipe for Walnut Cream Cheese Banana Bread back in 2011 during the first year of Carrie's Experimental Kitchen. It even made it into the cookbook!
Our favorite way to utilize ripe bananas is usually by making muffins, but every now and then I play around with the recipe to make variations.
How to make Walnut Cream Cheese Banana Bread?
For this recipe you'll need cream cheese, an egg, canola oil, ripe bananas, all purpose flour, baking soda, salt, dry instant vanilla pudding and walnuts.
Preheat oven to 350 degrees F. Using a wooden spoon, cream together the cream cheese, egg, and oil in a large bowl.
Next, mash the bananas until creamy using a blender or mini food processor; then add it to the cream cheese mixture.
Add the flour, baking soda, salt and pudding; then mix until well blended and add the walnuts. Grease a 9"x5" loaf pan, pour in the batter and bake in a preheated 350 degree F oven for 60-70 minutes.
The bread is done when the top springs back when touched or a toothpick comes out clean when inserted in the middle.
Walnut Cream Cheese Banana Bread
Ingredients
- 4 ounces softened cream cheese
- 1 large egg
- ¼ cup canola oil
- 2 ripe bananas
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 4 tablespoons dry instant vanilla pudding (approx. half of a 3.4oz box)
- ⅓ cup finely chopped walnuts

- Preheat oven to 350 degrees F.
