Don't you just love quick and easy dip recipes? I certainly do and this Marinated Hot Artichoke Dip is one of our new favorites. In fact, the only thing bad about this recipe is that I should have made more because it was gone in an instant! 

I'm pretty sure that I mentioned a while back that my father in law used to save old magazines and cookbooks. While we were cleaning out the basement, I took a few to see what some of the popular recipes were back in the 70's and 80's.

And I have to say there were some pretty good ones in there like this dip recipe.

How do you make hot artichoke dip?

I even think I might have eaten this dip at a party once because the flavor was pretty familiar. What I like best about this recipe is that there are only four ingredients. Y

ou'll need marinated artichoke hearts, grated Pecorino Romano cheese, mayonnaise and minced garlic.

I chose to use marinated artichoke hearts instead of the plain, canned variety. I think it really added that extra bit of zing to this recipe. Also, use a thick mayonnaise like Hellmann's or Best Foods.

Those dressing type mayonnaise brands are too sweet and you'll probably get a different flavor. 

Are you ready? All you have to do is chop the artichoke hearts, mix it with the rest of the ingredients, put it in a 1-quart oven safe baking dish; then bake for 20 minutes in a preheated 350 degree F oven.

This dip makes 1 ½ cups and serves 4. Like I said before, you should really double or even triple this recipe it's THAT good!

I could tell you all of the health benefits of eating artichokes, but seriously. When you mix them with cheese and mayonnaise all of those health benefits go right out the window. It's ok.

Everything in moderation right? I don't make too many indulgent recipes so I'll give myself a break and you should too. 

Serve this Marinated Hot Artichoke Dip immediately with toast rounds, pita chips, crackers or your favorite vegetable at your next get together or even if you want a quick after school snack for the kids.

We generally make dips like this one over the weekends while watching college or professional football games.

Sometimes, we don't even get to eat dinner because picking on dips like this one are so filling too. ~Enjoy!

Ingredients
  

  • 6 oz. Marinated Artichoke Hearts
  • ½ c. Grated Pecorino Romano Cheese
  • ½ c. Mayonnaise
  • 2 tsp. Garlic, minced

Instructions
 

  • Preheat oven to 350 degrees F.
  • Chop the artichokes, add them to a bowl; then add the rest of the ingredients. Mix well.
  • Place the mixture in a 1-quart oven safe baking dish; then bake for 20 minutes until hot and bubbly. Serve with toast rounds, pita chips, crackers or your favorite chopped vegetables.
