While recently shopping, I came across a new product from Near East called Basil & Herb Pearled Couscous. I love couscous, but my little one isn't fond of it.

I think the reason is because it's too small and she has a hard time putting it onto the fork and refuses to eat her dinner with a spoon. "I'm 10 now Mom, not a baby!".

Anyway, I thought since this was more like a pasta, she might eat it if I prepared it a little differently and came up with this simple Basil Pearled Couscous with Sun Dried Tomatoes salad.

This Basil Pearled Couscous Salad was deliciously light and flavorful salad and everyone loved it; including my 10 year old. I served ours as a side salad with grilled chicken and roasted vegetables. ~Enjoy!

Basil Pearled Cous Cous Salad with Sun Dried Tomatoes

Ingredients Needed

For this recipe you'll need the following ingredients:

  • Near East Pearled Basil & Herb Couscous
  • sun dried tomatoes
  • red onion
  • balsamic vinegar
  • lemon juice
  • extra virgin olive oil
  • kosher salt
  • black pepper

How do you make Couscous Salad with Sun Dried Tomatoes?

Prepare couscous according to package directions; let cool. It takes about 10 minutes to cook; then allow to cool for 30 minutes. You can do this up to a day before and keep refrigerated.

Add the couscous to a bowl; then add the sun dried tomatoes, onion, lemon juice, vinegar, and oil. Mix well, season as desired and refrigerate for at least 1 hour.

  • 1- (5-ounce) box Near East Pearled Basil & Herb Cous Cous
  • ¼ cup chopped sun dried tomatoes
  • 1 tablespoon chopped red onion
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Instructions
