Blueberry Pistachio Energy Bites (No Bake)

Eating healthy is hard, right? There are so many decadent foods out there tempting us at every corner; which is especially hard when you're trying to eat healthier. 

A few years ago I made homemade energy bars. They were so good that I came up with these Blueberry Pistachio Energy bites; which are smaller, bite sized portions. 

My husband and I have been dieting recently and have been really trying to watch what we eat. I have to say it really hasn't been that hard now that its mostly just the two of us.

However, every now and then we crave something sweet. These no bake energy bites are perfect! They're soft, chewy and deliciously sweet.

These energy bites take about 15 minutes to make and yield 12 balls.

What are energy bites?

Energy bites (aka energy balls) are filled with simple ingredients that are known to give you energy. They contain healthy fats, protein and extra fiber.

Ingredients Needed

For this recipe you'll need the following ingredients: 

Shelled Pistachios: To save some time, purchase pistachios that have already been shelled. 

Dried Blueberries

Unsweetened Shredded Coconut

Coconut Oil

Pitted Medjool Dates

How do you make Blueberry Pistachio Energy Bites?

Add 2 tablespoons each of the pistachios and coconut flakes to a mini food processor; then pulse until fine. Add the mixture to a small bowl as this will be the topping. 

To the same food processor, add the remaining pistachios, coconut flakes, blueberries, dates and coconut oil. Pulse until fine and the mixture is well blended. 

Using clean hands, shape 12 balls and roll each one in the reserved pistachio and coconut mixture. Store in an airtight container in the refrigerator for up to one week.

If the combination of blueberries and pistachios don't appease you, the following substitutes can be made:

  • dried cranberries
  • dried apricots
  • dried figs
  • raisins
  • pecans
  • walnuts
  • almonds
  • cashews
  • peanuts

Ingredients
  

For the Topping

  • 2 tablespoons shelled pistachios
  • 2 tablespoons unsweetened shredded coconut flakes

For the Energy Bites

  • ¼ cup shelled pistachios
  • ¼ cup unsweetened shredded coconut flakes
  • ¼ cup dried blueberries
  • 16 pitted medjool dates
  • 1 tablespoon coconut oil

Instructions
