If you're looking for a quick and easy tasty treat, these Cheesecake Coated Strawberries are perfect! I saw a similar recipe in a magazine recently and since I don't have many desserts for Valentine's Day on the blog, I decided to whip some up one afternoon. 

When I see and develop new recipes, I generally ask myself the question,  "Would my kids be able to make this recipe on their own?" Then I go about trying to make it with as few ingredients as I can and make the instructions simple to follow.

I have to say that it is easier now that they're 23 and 18 so I don't ask myself this question as frequently as I did when I first started this blog 9 years ago. However, I now have great nephews ages 6 and 4 that LOVE to help in the kitchen.

So when I saw this recipe for Cheesecake Coated Strawberries, I knew they could make these themselves, with a little help from mom that is!

How do you make Cheesecake Coated Strawberries?

For this recipe you'll need fresh strawberries, butter, cream cheese, confectioners sugar, vanilla extract, milk and graham cracker crumbs. 

Start by rinsing the strawberries under cold water; then allow to dry on paper towels. Leave the stems on as it will help with dipping. 

Add room temperature butter and cream cheese to a mixing bowl, along with the sugar, milk and vanilla extract. Beat with an electric mixer until smooth.

You can use your stand mixer; however, since you don't need that much this piece of equipment might be a little too big for the job.

If enlisting the help of the kids, you can help by holding the mixer with them if they're still young. You don't want to be cleaning icing up from the ceiling! 

Next, place the graham cracker crumbs in a small bowl; then you're ready to assemble. I used the boxed graham cracker crumbs; however, if you only have whole graham crackers, you can pulse them in a mini food chopper before dipping. 

Cheesecake Coated Strawberries

Line a baking sheet with parchment paper; then assemble the strawberries by dipping them into the cream cheese icing; then into the graham cracker crumbs.

Repeat for all of the strawberries and place them on the baking sheet once coated. Place them in the refrigerator for 30-60 minutes until ready to serve. 

Don't wait for a special occasion or holiday! These Cheesecake Coated Strawberries were so easy to make, they would make a tasty treat any day of the week. ~Enjoy!

  • 24 Strawberries
  • 4 tbsp. Butter, room temperature

      Sorry, I forgot to add the sugar. It's 2 tablespoons of Confectioners Sugar. I'll adjust the recipe card!!
