To make this recipe you're going to need the following ingredients:
Spaghetti Squash
Ground Chicken: I prefer extra lean, all white meat ground chicken, but you can also substitute with any combination of lean/fat ratio, use ground chicken or even precooked leftover rotisserie or diced leftover chicken.
Extra Virgin Olive Oil
Minced Garlic
Prepared Tomato Sauce: You can use your favorite homemade or jar sauce, or even use vodka sauce; like I did in this recipe.
Fresh Chopped Basil
Shredded Mozzarella Cheese
Cook the Spaghetti Squash
There are two ways that I like to cook spaghetti squash - in the oven or microwave.
Most of the time I use the microwave because it only takes about 10 minutes whereas cooking in the oven can take 45-60 minutes. The microwave definitely is a time saver on busy weeknights, but you can cook either way you prefer.
Oven Directions: Preheat oven to 425 degrees F. Cut the spaghetti squash in half horizontally, then scoop out the seeds. Place the squash on a baking sheet flesh side down and cook until flesh is easily shreddable, about 45 minutes.
Microwave Directions: Cut the spaghetti squash in half horizontally, then scoop out the seeds. Place the squash on a microwave safe dish flesh side down, add 2 tablespoons of water and cook on high for approximately 10 minutes.
You can tell the squash is done if the outer skin is pliable and you can separate flesh into strands with a fork. Depending on the size of the spaghetti squash, you may have to adjust your cooking time slightly.
You can cook the spaghetti squash up to 1 day ahead of time, shred the flesh; then store in an airtight container in the refrigerator until ready to use.
How do you make Chicken Parmesan Squash?
Start by preheating the oven to 375 degrees F and cook your spaghetti squash in the microwave. Heat the oil in a large nonstick skillet; then add ground chicken and cook until no longer pink.
Add the garlic and basil and cook for another minute; then add the sauce and cook for 2-3 minutes until the sauce is heated through.
Next, add the spaghetti squash strands, half of the cheese and mix together. Add the mixture back into the spaghetti squash shells that have been placed on a sheet pan or you can add the mixture to a casserole dish; then top with the remaining shredded cheese.
Place the squash in the oven and cook for 15 minutes until the cheese has melted and is hot and bubbly.
