Sundays are usually a day where I'll make a roast of some sort; whether it be chicken, roast beef or a pork loin. And most of the time I'll wind up with leftovers; like I did when I recently make this roasted pork.
Sometimes we'll just eat it 'as is', but every so often I'll experiment with recipes with my leftovers. Usually when I have leftover pork, I'll make fried rice. However, this time I made this BBQ Pork Spaghetti Squash.
It was delicious, super easy to make and only took 30 minutes. This recipe serves 4 people and can be ready in 30 minutes! Depending on the type of bbq sauce you use, this recipe can also be gluten free.

For this recipe you'll need the following ingredients:
Large Spaghetti Squash
Cooked Diced Pork Loin: You can use pork loin or pork chops. Another idea is to use leftover pulled pork!
BBQ Sauce: You can use your favorite sauce in this recipe, but I used a honey bbq sauce. I started with 1 cup; which was enough for my size squash, but you may need to adjust accordingly depending on the size of your spaghetti squash.
Shredded Cheddar Cheese
Ranch Dressing (optional): We liked some drizzled on top of the squash once baked, but it's not necessary.
Prepare and Cook the Squash
There are two ways to cook the spaghetti squash: oven and microwave. For this recipe and to make this a quick recipe, I used the microwave.
Cut the squash in half lengthwise; then remove the seeds. Place each half of the squash flesh side down on a microwave safe plate; then add 2 tablespoons of water.
Cook on high 10-12 minutes; depending on the size of the squash. The squash will be done when the outer skin is soft to touch. Carefully remove the plate from the microwave (it will be hot). You're now ready to prepare the BBQ Pork Spaghetti Squash!
How do you make BBQ Pork Spaghetti Squash?
Preheat the oven to 350 degrees F. Add the diced pork and bbq sauce to a large bowl; then mix well. This can be done while the squash is cooking.
Using a fork, scrape out the flesh of the cooked spaghetti squash into the bowl. Repeat for each half; then place the scooped out shells on top of a sheet pan.
Add half of the cheese to the mixture, toss to coat; then divide the mixture evenly amongst the two squash shells. Sprinkle the remaining cheese on top; then bake 10-15 minutes or until the cheese is melted.
Remove the pan from the oven; then drizzle the tops with Ranch dressing (if desired).
Can you make this into a casserole?
Absolutely! Instead of putting the mixture back into the spaghetti squash shells, you can place it in a 9x13 oven safe baking dish, top with cheese and bake the same way.
