Looking for a new twist on a classic dish? Try making drunken chicken parmesan! This recipe adds a flavorful twist to traditional chicken parmesan by incorporating vodka and heavy cream into the sauce.
The chicken is breaded and fried; then topped with a creamy, pink vodka sauce and melted fresh mozzarella cheese.
This recipe yields 8 pieces of chicken, can be ready in about 40 minutes and tastes great alone with your favorite side dishes or over pasta. ~Enjoy!

To make drunken chicken parmesan, you will need the following ingredients:
Thin Sliced Boneless, Skinless Chicken Breasts: I love that you can purchase these already sliced and they're usually around 2-ounces each. You can also use a whole chicken breast and slice it thin horizontally or use chicken tenderloins; then pound them out flat.
All Purpose Flour
Eggs
Italian Flavored Breadcrumbs
Extra Virgin Olive Oil
Prepared Vodka Sauce: You can use my recipe for homemade vodka sauce; however, it makes 5 cups and you only need 2 cups for this recipe. You can also use 2 cups of your favorite marinara sauce and add ½ cup heavy cream and ¼ cup of vodka for a quick version!

How do you make Drunken Chicken Parmesan?
To make drunken chicken parmesan, start by pounding the chicken breasts until they are an even thickness if they aren't already. Dredge the chicken in flour, then dip it in beaten eggs, and coat it in breadcrumbs. Repeat for all pieces.
Heat olive oil in a large skillet over medium-high heat and cook the chicken until it is golden brown on both sides; approximately 2-3 minutes per side.
Remove the chicken from the skillet and drain on a plate lined with paper towels; set it aside. Preheat the oven to 350 degrees F.
Add the prepared vodka sauce to a small saucepan and simmer until warm; then ladle 1 cup of the sauce into the bottom of a 9x13 oven safe baking dish; coating the bottom.
Lay the chicken down in the dish, trying not to overlap them on top of each other. Top each piece with the remaining sauce; then add the sliced Mozzarella cheese on top of each piece.
Place the dish in the oven and cook for 15-20 minutes or until the cheese has melted and is hot and bubbly.
Serving Suggestions
When serving, consider adding a side of garlic bread or a simple green salad to round out the meal. And don't forget to garnish with fresh basil or parsley for a pop of color and added flavor.
You can also serve over pasta like linguine, spaghetti, fettuccine or capellini.
Storage
You can keep the chicken stored in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months once cooled completely.
