Homemade chicken salad with fresh tzatziki sauce made with Greek yogurt, English cucumbers and fresh dill is delicious, quick and easy!
Whether you use a store bought Rotisserie chicken, leftover whole roasted chicken or cook your own chicken breasts, this salad will be a new favorite.
Our oldest daughter doesn't care for mayonnaise so every now and then I like to experiment with recipes that are perfect just for her. Using Greek yogurt in recipes is a tasty and healthy alternative.
Greek yogurt can be used in salads like this one; as well as dips, marinades and even desserts.
By using pre-cooked chicken, this Tzatziki Chicken Salad can be ready in 15 minutes. This salad makes 2 cups and is perfect for lunch or dinner alone, on top of a garden salad or on a sandwich.
What is Tzatziki?
Tzatziki is a creamy and tangy dip made with Greek yogurt, cucumber, garlic, and dill. It's perfect for dipping veggies, pita bread, or using as a sauce for grilled meats.
It adds a refreshing flavor, is versatile in a lot of recipes and is a healthier alternative to other fat laden dips.
Suggested Equipment
Ingredients Needed
To make Tzatziki Chicken Salad you'll need the following ingredients:
Pre-Cooked Boneless Chicken Breasts: I used a store bought Rotisserie chicken, but you can use any cooked chicken breasts.
Plain Non Fat Greek Yogurt
English Cucumber: After washing the skins, you can chop the cucumber in fine pieces or use a grater.
Garlic
Lemon Juice
Fresh Dill
Chopped Celery
Kosher Salt
Black Pepper
For a shortcut, you can also use store bought pre-made Tzatziki sauce which can usually be found by other refrigerated dips or hummus!
Prepare the Chicken
Personally, I like to pull the meat off of the Rotisserie chicken when it's still warm. Then you can shred the meat with your clean hands and store it in the refrigerator.
Once the chicken is cool, it becomes more difficult to shred so you'll need to dice the meat before preparing the salad.
Another option is to place the chicken into a food processor and pulse until finely chopped.
Make the Tzatziki
Add the Greek yogurt, chopped cucumbers, garlic, lemon juice and dill in a small bowl and mix well until combined.
You can store fresh tzatziki in an airtight container in the refrigerator for up to four days. This makes approximately ½ cup.
Assemble the Tzatziki Chicken Salad
In a medium bowl, add the shredded or diced chicken, prepared tzatziki, chopped celery, salt and pepper.
Mix well until combined; then serve alone, on top of your favorite garden salad or on a sandwich.
Storage
You can store this chicken salad an airtight container in the refrigerator for up to four days.
