Isn't if funny how food trends change? Growing up, I can't remember a picnic without Waldorf Chicken Salad; which is a salad made with apples, walnuts, grapes and was mayonnaise based.

And for those of you who have never heard of it, it was very popular back in the early 70's. Though as an adult, I don't think I've eaten it or even seen it as an option on a menu or picnic in years.

I make a roasted chicken at least once a week because making other meals with the leftovers like pot pie, soup and chicken salad are a great way to use up the excess. 

One of my favorites is Rotisserie Style Chicken Salad, though this copycat version from Panera is pretty tasty too!

Ingredients Needed

For this recipe you'll need cooked chicken breasts, apples, celery, walnuts, mayonnaise, honey, lemon juice, Kosher salt and black pepper.

This is the perfect recipe to utilize leftover roasted or store bought rotisserie chicken.

How do you make Waldorf Chicken Salad?

Start by dicing the chicken; then add it to a bowl along with the celery and walnuts. Next, peel the skin from the apple and chop into bite-sized pieces; then add it to the bowl.

In a separate bowl, combine the mayonnaise, honey, lemon juice, salt and pepper; then whisk until smooth and add it to the chicken and mix well.

Keep refrigerated until ready to serve either alone, on a sandwich or on top of a salad.

Ingredients
  

For the Chicken Salad

  • 2 cups diced cooked chicken breasts
  • 1 apple, (washed, cored and peeled)
  • 1 stalk celery (rinsed and chopped)
  • ¼ cup chopped walnuts
  • ½ cup mayonnaise
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper

Instructions

Notes

    I love Waldorf Salad. I've seen it on a menu in a restaurant where I live, it was served in a grilled pineapple shell, with grilled cubed pineapple as the garnish. It was heavenly.

    I don't think I liked this as a child b/c it was always made with nasty red delicious apples! I've had some recently and it was SO good! Like yours the mayo was cut with something else...I may have to make myself a batch 🙂
