This tangy, smokey flavored chicken salad is made with rotisserie chicken, honey bbq sauce and Ranch salad dressing.
Chicken salad is one of my favorite lunches; especially now that I'm homebound recuperating from double ankle surgery. I tend to eat three smaller meals per day instead of a larger breakfast, snack and dinner.
My body is craving protein; which helps with the healing process. Most of the time I'll just make regular rotisserie chicken salad, but every now and then I like to mix it up a bit and add different flavors.
Some of my other favorites are Napa Almond Chicken Salad, Greek Chicken Salad and the classic Waldorf Chicken Salad. Plus, emptying out the fridge is always a plus too; which is how this Honey BBQ Ranch Chicken Salad came to be.
Since I can't drive, my girls have been doing most of the food shopping and a rotisserie chicken is always on our weekly shopping list.

What type of chicken is best?
Personally, I prefer using all white meat when making chicken salad. If utilizing a store bought rotisserie chicken like I did, I save the dark meat for pot pie or chicken soup.
You can also use leftovers from a whole roasted chicken, grilled or boiled chicken breasts.
How do you make Honey BBQ Ranch Chicken Salad?
For this recipe you'll need precooked chicken, celery, scallions, honey bbq sauce, Ranch salad dressing, Kosher salt and black pepper.
Shred the chicken with your fingers or dice into small pieces with a knife; then place in a medium bowl. Next, add the diced celery and scallions.
In a small separate bowl, combine the bbq sauce and dressing until well blended; then add it to the chicken and mix well. Season with salt and pepper; then keep refrigerated until ready to serve.
What is the best kind of bbq sauce to use?
Everyone has their favorites, but mine is Honey BBQ Sauce. You can substitute your favorite regular bbq sauce and add some honey to it if you'd like also.
