Ingredients Needed

To make this lemon garlic orzo chicken you're going to need the following ingredients:

Diced Boneless Chicken Breasts: I made this recipe using chicken breasts and had to cook them first, but to save some time you can also use shredded or diced leftover grilled, roasted or rotisserie chicken.

Extra Virgin Olive Oil

Butter

Fresh Garlic: In some recipes you can use jarred minced garlic and though you can use that in this recipe, thinly sliced fresh garlic works best and incorporates more of a garlic flavor.

Orzo: Orzo is a short grain pasta that resembles rice. You can also use Arborio rice; which is used in risotto for this recipe as well. If you do, you may need to test to make sure the rice is cooked properly and if not, just add a bit more chicken stock until the rice is cooked through.

Chicken Stock

Lemon (juice and zest)

Parsley

Kosher Salt

Black Pepper

Heavy Cream: You can also use light cream or half and half.

Grated Pecorino Romano Cheese

How do you make Lemon Garlic Orzo Chicken?

Start by heating the olive oil in a large skillet over medium high heat; then add the diced chicken and cook 2-3 minutes until its almost cooked through.

Add the butter to the pan to melt; then add the garlic and orzo and stir 1-2 minutes. Next, add the chicken stock, lemon zest, lemon juice, parsley, salt and pepper.

Cover the pan with a lid, reduce the heat to low; then simmer for 15 minutes or until the liquid has absorbed. Finally, add the heavy cream and grated cheese and cook for another 10 minutes uncovered until the mixture is creamy.

Add the orzo to a serving bowl; then garnish with additional cheese or parsley, if desired.

Additions

To make this al all-in-one meal, you can add your favorite fresh vegetables for the last 10 minutes. Some great choices are fresh spinach, broccoli florets or diced asparagus.
