My family loves pizza night and to be honest, so do I. Not only is it easy to make at home, there are so many different varieties like this new recipe for Roasted Garlic and Mushroom French Bread Pizza. 

Ninety percent of the time, Friday is pizza night in our house. It's probably a split between ordering takeout or we make it homemade. We all have our favorites, but I do like to experiment with new flavors every now and then.

Lately, I've been on a mushroom pizza kick. However, since our youngest doesn't like them, I'll always make her a caprese style pizza; which is always a favorite. 

Even though we're a family of four, I always make or buy two pizzas because then we can freeze the leftovers to reheat for a quick lunch or dinner when there's no time to cook. Unfortunately this recipe didn't even make it into the freezer, it was THAT good! 

Roasted Garlic before

How do you roast garlic?

Roasting garlic is super easy and when done, it's spreadable like butter and sweeter than regular minced garlic. When roasting garlic you'll need the full head, some EVOO and Kosher Salt.

Preheat the oven to 425 degrees F; then peel most of the papery skin from the outside of the garlic. Cut off the top of the head with a sharp knife and place either in a garlic baker or in a sheet of aluminum foil.

Drizzle some oil, sprinkle with salt and wrap  (or cover) the garlic. Roast for 30 minutes until the inside cloves are soft; then remove from the oven. To remove the garlic squeeze each clove out of the papery shell.

You can make this up to 3 days ahead and keep in the refrigerator until ready to use.

How do you make Roasted Garlic and Mushroom French Bread Pizza?

If you're making this recipe all at once, you can prepare the pizza ingredients while the garlic is roasting. You'll need a loaf of French bread, mayonnaise, grated Pecorino Romano cheese, Dijon mustard, butter, sliced mushrooms, and shredded Italian cheese blend. 

Start by cutting the loaf of bread down the middle horizontally creating two halves. In a small bowl combine the mayonnaise, cheese and mustard until well blended. Divide the mixture between the two halves of bread and spread evenly on top. Next, spread the shredded cheese on top of both loaves.

Melt the butter in a nonstick pan over medium high heat; then add the mushrooms and the roasted garlic. Cook for 5-8 minutes until softened and caramelized; then divide the mixture and spread on each half of the bread. 

Place the two loaves of bread on a sheet pan and bake in a 425 degree F oven for 20 minutes or until the cheese has melted. Remove from the oven and cut each loaf into eight slices.

I think this Roasted Garlic and Mushroom French Bread Pizza is one of my new favorites! The bread is super crunchy on the outside and soft, chewy on the inside with all of that cheesy goodness.

You can serve this pizza for dinner or even as an appetizer at your next gathering. Roasting the garlic really gave it a nice flavor. ~Enjoy!

  • 1 head garlic
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon kosher salt
