Summer is bbq season and with that comes a lot of grilled chicken recipes. Of course, I always tend to make too much food, but making new recipes with leftovers is the perfect way to utilize ingredients and create something new.
This flatbread recipe is super simple to make, is rich in those smokey bbq flavors and can be ready in about 30 minutes. ~Enjoy!

To make this flatbread, you're going to need the following ingredients:
Pizza Dough: You can purchase pizza dough in the refrigerator or freezer section of your grocery store, purchase from your local pizzeria or make it homemade. You'll just want to ensure that the dough is room temperature before preparing this recipe so it's easier to stretch.
Extra Virgin Olive Oil
Ranch Dressing: We like the creaminess of Hidden Valley Original Ranch Dressing.
Cooked Diced Chicken: You can use any leftover or rotisserie chicken; white meat is best.
BBQ Sauce: You can adjust the flavors to your liking by using your favorite sauce. I like to keep Sweet Baby Ray's Honey BBQ Sauce in my pantry to use in recipes like this or you can make homemade like this Whiskey Maple BBQ Sauce.

Gather and prep all of your ingredients before making this delicious BBQ Cheddar Flatbread!
Stretch the Dough
Preheat the oven to 425 degrees F.
Add the oil to the bottom of the sheet pan and spread it around with the dough, coating both sides. With clean hands, stretch the dough as thin as you can get it without tearing. It's okay if it's not completely uniform in shape.
Combine the ingredients
Combine the diced chicken and bbq sauce in a bowl and mix well to coat all of the pieces.
the Toppings
Spread thin layer of Ranch dressing on top of the dough, leaving a ½-inch border around the sides for the crust.
Next, add the diced chicken mixture and spread evenly over the dressing; then top with the shredded cheese.
Bake the BBQ Chicken Flatbread
Place the pan in the oven and bake for 15-20 minutes or until the edges are crispy and the center is cooked through. Remove the flatbread from the oven and using a spatula transfer to a cutting board.
Wood works better than plastic so the bottom of the crust stays crispy! Using a sharp knife or a pizza cutter, cut the flatbread into 8 pieces; then serve hot alone or with additional Ranch dipping sauce.
