Flatbread pizza topped with diced chicken, broccoli florets and Mozzarella cheese makes a delicious snack or quick weeknight meal.
Friday's are generally pizza night; whether we make it at home or order out. By the end of the week, we're simply exhausted working long hours.
Having to figure out dinner on top of it can be a real challenge. Making pizza or flatbread; which is basically the same thing in my opinion, is super easy and so versatile.
You can use whatever you have on hand, even leftovers from the week like I did with this chicken and broccoli experiment. ~Enjoy!

- Knife or Pizza Cutter
Ingredients Needed
To make this recipe you're going to need the following ingredients:
Pizza Dough: Allow the dough to come to room temperature before trying to spread it out, it will make it easier to spread. I generally purchase it from the refrigerator or freezer section of my local grocery store, but you can make it homemade or buy one from your local pizzeria.
Extra Virgin Olive Oil
Mayonnaise: Hellmann's is best. I don't recommend Miracle Whip as it has a tangier flavor and may alter the taste.
Garlic Powder
Shredded Mozzarella Cheese: I used Mozzarella, but you can swap it for Cheddar or Monterey Jack.
Cooked Chicken: You can use any pre-cooked chicken whether it be from a leftover roast, grilled or even rotisserie chicken.
Chopped Broccoli Florets: I used frozen broccoli that had been defrosted and diced. If using fresh broccoli, allow extra time to steam them first.
Kosher Salt

How do you make Chicken and Broccoli Flatbread?
Start by preheating the oven to 425 degrees F; then generously grease a sheet pan with olive oil. You want to add enough so that the flatbread doesn't stick once cooked.
Spread the dough into a rectangle shape about ½-inch thick; then spread the mayonnaise on the dough leaving a ½-inch boarder.
Sprinkle with the garlic powder; then add the cheese to cover the mayonnaise.
Top with the diced chicken and broccoli, season with salt and pepper; then add the pizza to the middle rack of the oven.
Cook for 15-20 minutes or until the edges have puffed up, crispy and lightly browned.
Remove the pizza from the oven, allow to cool for 5 minutes; then transfer to a wooden cutting board and cut into 10 pieces.
I suggest using a wooden cutting board so that the flatbread stays crispy on the bottom.
When using a plastic cutting board, it traps the moisture causing the pizza to become flimsy.

Ingredients

- 3 tablespoons extra virgin olive oil
- ¼ cup mayonnaise
- 2 teaspoons garlic powder
- 1 cup shredded mozzarella cheese
- 1 cup diced cooked chicken
- 1 cup diced cooked broccoli florets
- kosher salt (to taste)
- black pepper (to taste)
Instructions
