In my opinion, you can never have too many chicken dishes in your repertoire; especially dishes like this Grilled Chicken with a Dijon Tarragon Sauce. It’s seriously good and only takes 20 minutes to make.
Now I know you’re probably thinking “Why is she sharing a grilling recipe in the middle of winter?”, but I needed something to help make me feel like Spring and warmer weather is on the horizon with these brutally cold temperatures we’ve been experiencing in the Northeast. And in all honesty, if you have a grill pan, Cuisinart or George Forman indoor grill, you can grill all year round.
This recipe for Grilled Chicken with a Dijon Tarragon Sauce is not only quick to make, it’s low fat and delicious! You’ll never believe that it’s only 135 calories per serving, but if you don’t like yogurt you can substitute sour cream instead.
Simply grill your chicken breasts and while they are cooking combine some dijon mustard, fresh tarragon, scallions, and fat free/low sodium chicken broth in a small saucepan; then whisk in a little Greek yogurt at the end before pouring the sauce over the chicken.

- Grill chicken breasts 8-10 minutes or until cooked through; set aside and keep warm.
