Grilled Chicken in a Dijon Tarragon Sauce
Ingredients
- 4- (6-ounce) boneless chicken breasts
- 2 tablespoons dijon mustard
- 1 tablespoon chopped fresh tarragon
- 2 scallions, chopped
- 1 cup chicken broth
- 2 tablespoons nonfat plain greek yogurt
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
Instructions
- Grill chicken breasts 8-10 minutes or until cooked through; set aside and keep warm.
- In a small saucepan, combine the mustard, tarragon, scallions and chicken broth. Bring to a boil, season with salt and pepper; then remove from heat.
- Whisk in the yogurt until smooth; then pour the sauce over the chicken.
