Plain grilled chicken can get boring, but adding some fresh summer fruit definitely dresses it up a bit.
How do you make Summer fruit salsa?
For this recipe you'll need boneless chicken breasts, tomatoes, mangoes, peaches, red onion, lime juice, fresh cilantro, balsamic vinegar, EVOO, Kosher salt and black pepper.
Combine all ingredients in a bowl except the chicken. Mix well; then refrigerate until ready to serve. Grill the chicken for approximately 6-7 minutes per side until cooked through; then top with chilled Summer Fruit Salsa.
This fruit salsa takes minutes to prepare and really has a fresh taste. Not only does this work with grilled chicken, the salsa can be used on top of pork, seafood or used as a dip. ~Enjoy!

Grilled Chicken with Summer Fruit Salsa
Ingredients
- 4- (6-ounce) boneless chicken breasts
- Prepared Summer Fruit Salsa
For the Summer Fruit Salsa
- 1 Heirloom Tomato, finely chopped
- 1 Mango, peeled, de-pitted and finely chopped
- 1 Peach, peeled, de-pitted and finely chopped
- 1 teaspoon minced red onion
- 1 tablespoon lime juice
- 1 teaspoon chopped fresh cilantro
- 1 teaspoon balsamic vinegar
- 2 teaspoons Extra Virgin Olive Oil
- Ā¼ teaspoon Kosher salt
- ā teaspoon black pepper
Instructions
- Grill chicken until proper internal temperature is reached. Top with chilled salsa.
For the Summer Fruit Salsa
- Mix all ingredients together and chill until ready to serve. Makes 1 cup.

this looks yummy.... I love fruit and veggies salsa's. Have some mangos and peaches cut up in the fridge ~ may just add some extra stuff to them. This would be good with cucumbers too.
