Are you ready for a really quick and easy weeknight dinner idea? Good, because these Grilled Chicken Parmesan Sliders are it. I've been seeing recipes for these types of sliders all over Pinterest.

Even in the latest issue of Cooking Light Magazine; however, in their version of this recipe, ground chicken is used. Though I bet they also taste good, my kids prefer "real" chicken whenever possible and by "real" I mean chicken that isn't ground.

What do you need to make Grilled Chicken Parmesan Sliders?

I really took the easy road with this recipe and all you need are the following ingredients:

  • Boneless Chicken Breasts. I purchased thinly sliced boneless chicken breasts. They were the perfect thickness and all I had to do was cut them in half in order to fit on my slider rolls.
  • Marinara Sauce. I used my homemade marinara sauce I already had prepared and was storing in the freezer, but if you want to use your favorite jar sauce, go right ahead. You don't need much; only about ½ cup.
  • Fresh Mozzarella. I think this one is self explanatory, but try to purchase the ones that are elongated versus in a round ball. You'll get more slices out of them for the sandwich.
  • Slider Rolls. Because this is more of an Italian dinner, I opted for slider sized Ciabatta rolls. Ciabatta is an Italian white bread made from wheat flour, water, salt, olive oil and yeast and was created back in 1982 in Veneto, Italy. This is also generally the type of bread used when making panini's in Italy. I like how airy the bread is on the inside and crusty on the outside.
  • Fresh Basil. I chose to add a whole leaf to each sandwich to give it some color. Or you can chop it up and sprinkle it on top of the cheese. Not only did it make the sandwich pop with color, it added an extra freshness.

how do you assemble the Sliders?

That's the easy part! Follow these simple steps and get the entire family involved:

  1. Slice open the rolls and drizzle them with a little extra virgin olive oil and salt. Place on a baking sheet and bake while the chicken is grilling (about 5-8 minutes) so they get extra crispy.
  2. Grill the chicken breasts. I used my Cuisinart indoor griller and got all eight pieces of chicken cooked in about 8 minutes because I had to do them in two batches, but they will generally only take about 2-3 minutes per side.
  3. Place the cooked chicken on a foil lined baking sheet, top each piece with sauce and a piece of mozzarella; then place under the broiler for 5-7 minutes until the cheese melts.
  4. Place the chicken on the slider roll, top with fresh basil and the top of the roll; then dig in!

This recipe for Grilled Chicken Parmesan Sliders makes enough to feed a family of four (2 sliders each). Dinner was ready in about 20 minutes and were so filling that we really didn't eat anything else with them.

Not to mention these are much healthier than the typical chicken parmesan sandwich.

Ingredients
  

  • 4 thin sliced boneless chicken breasts cut in half
  • ½ cup prepared marinara sauce
  • 8 ounces fresh sliced mozzarella
  • 8 ciabatta slider rolls, c cut in half
  • 8 whole fresh basil leaves (or ½ cup chopped fresh basil)
  • extra virgin olive oil
  • kosher salt, to taste

Instructions
 

  • Preheat the oven to 425 degrees F. Slice the rolls in half and drizzle them with a little extra virgin olive oil and salt. Place on a baking sheet and bake while the chicken is grilling (about 5-8 minutes) so they get extra crispy.
  • Grill the chicken breasts until they're cooked through; about 2-3 minutes per side.
  • Place the cooked chicken on a foil lined baking sheet, top each piece with sauce and a piece of mozzarella; then place under the broiler for 5-7 minutes until the cheese melts.
  • Place the chicken on the slider roll, top with fresh basil; then the top of the roll.
