Penne pasta combined with sweet Italian sausage, sun dried tomatoes and fresh chopped basil is a quick and tasty weeknight meal.

There aren't many foods I like to eat leftover; however, pasta is definitely one of them! Especially when it's pasta mixed with some of my favorite robust flavors like in this Penne Pasta with Italian Sausage, Sun Dried Tomatoes & Basil.

How do you make Penne with Italian Sausage, Sun Dried Tomatoes & Basil?

For this recipe you'll need penne pasta, EVOO, garlic, onion, sweet Italian sausage, sun dried tomatoes, fresh basil, dry red wine, and Pecorino Romano cheese.

Start by preheating the oven to 350 degrees F; then place the sausage on a baking sheet and bake for 30 minutes; turning once. Remove from oven and slice into ¼-inch thick slices.

While the sausage is cooking, prepare the pasta according to package instructions; drain and place back in the pot. Add the oil to a large nonstick skillet over medium heat; then add the garlic and onions and saute for 1 minute.

Next, add the basil, tomatoes and sausage slices. Saute for approximately 5 minutes until the sausage is browned on both sides; then add the red wine and simmer for another 5 minutes until the wine is reduced. Add this mixture to the cooked pasta, add the cheese and mix well.

Ingredients
  

  • 1 lb. Penne Pasta
  • 1 tbsp. Extra Virgin Olive Oil
  • 2 Garlic Cloves, minced
  • ¼ c. Red Onion, small dice
  • ¼ c. Fresh Basil, chopped
  • ½ c. Sun Dried Tomatoes (not in oil), chopped
  • ¼ c. Dry Red Wine
  • 4 Sweet Italian Sausage Links
  • ¼ c. Pecorino Romano Cheese, grated

Instructions

    I plan on experimenting with drying tomatoes this summer--I keep finding new recipes I want to try with them!
    Thanks, Carrie--I'm going to go sniff my new bag of fennel seeds now to stave off the craving for this pasta (It's Friday, gotta make a pizza you know).
