This recipe is quick and easy to prepare, making it perfect for busy weeknights. The cheese tortellini cooks in just minutes, while the sausage can roast on a sheet pan for minimal cleanup.

The creamy pink tomato sauce comes together in one pan with just a few ingredients creating a rich, flavorful coating for the pasta.

In under 30 minutes, you’ll have a comforting, restaurant-quality meal on the table with very little effort. ~Enjoy!

Ingredients Needed

To make this recipe you're going to need the following ingredients:

Tortellini: We opted for cheese tortellini, but you can substitute any regular or filled pasta like mini ravioli, gnocchi or rigatoni.

Italian Sausage: Sweet or hot sausage links can be used in this recipe. If using ground sausage, you'll have to cook it on the stovetop in a pan until no longer pink.

Broccoli Florets: To make this recipe in less time, I opted to use frozen defrosted broccoli florets. If using fresh broccoli, allow extra time to steam the broccoli prior to adding it to the pasta.

Marinara Sauce: Use your favorite. I always have some homemade sauce in the freezer, but your favorite jar sauce is fine too.

Italian Seasoning

Heavy Cream: You can also use half and half or light cream. You just want to add a bit to cut the acidity and give the sauce a nice pink tone.

Grated Pecorino Romano Cheese

Kosher Salt

Pepper: You can use black pepper or crushed red pepper.

Roast the Sausage

Preheat the oven to 425 degrees F; then line a baking sheet with aluminum foil.

Add the sausage links to the pan and cook for approximately 25-30 minutes; until the sausage is cooked through and no longer pink.

Remove the pan from the oven and slice each sausage link into ½-inch thick slices.

Cook the Tortellini

Start to cook the tortellini 15 minutes after the sausage is in the oven. Bring a large pot of water with a few dashes of salt to a rolling boil; then add the tortellini 5 minutes before the sausage is done cooking.

Drop in the tortellini and cook 2-3 minutes until it starts to float to the top. Drain the water.

Prepare the Pink Cream Sauce

Add the marinara sauce, Italian seasoning, pepper and heavy cream to a small saucepan, mix; then heat on low until the sauce is hot.

You can also use a vodka sauce in this recipe!

Defrost the Broccoli Florets

Add the frozen broccoli florets to a microwave cooker with a little water; then cook on high for 5 minutes. Drain the water.

Assemble the Tortellini with Broccoli

Add the cooked tortellini, sausage slices, broccoli and sauce to the pot; then toss to coat. Place in a serving bowl; then garnish with grated cheese.
