Reuben Tacos are made by stuffing soft tortilla bowls with diced corned beef, sauerkraut, and Swiss cheese; then baked and topped with Russian Dressing.
Every year I try to come up with new recipes for St. Patrick's Day. Some of our favorites were Irish Cottage Pie, Guinness Steak and Leek Pie, Irish Soda Bread and Irish Champ to name a few.
When it comes to corned beef, I like to prepare it pretty simple so I tend to make it the way my family likes it, but always have leftovers. Sure you can make corned beef hash or sliders, but my family REALLY liked these Rueben Tacos too!
When I first thought about making tacos with the leftovers, I was originally thinking of using hard taco shells like you would with a regular taco. That was until I went to the store and found soft flour tortilla bowls and decided these would work much better.
What is a Reuben?
A Reuben is a grilled sandwich on rye bread that is stuffed with corned beef, Swiss cheese, sauerkraut and Russian dressing. It's found in Kosher style deli's; however, it isn't kosher because it contains meat and cheese.
When my husband and I were in our early 20's, we'd go to this restaurant called Harolds New York Deli and get Reuben sandwiches. They were delicious; however, the portions were enormous!
Seriously, you could probably feed 8 people with one sandwich there was so much meat on there! It's funny too because I'm not a huge fan of sauerkraut. However, I'll eat it when it's on a Reuben.
How do you make Reuben Tacos?
For this recipe you'll need cooked corned beef, soft flour tortilla bowls, sauerkraut, Swiss cheese and Russian dressing. If you're not using leftover corned beef, you can still make this recipe by purchasing some at your deli counter.
First preheat the oven to 425 degrees F. Dice the corned beef; then fill up the tortilla bowl ¾ of the way to the top and place on a baking sheet.
Next, top the corned beef with sauerkraut and place in the oven for 10 minutes to heat it up. Remove the pan from the oven, turn on the broiler; then top each taco with a slice of Swiss cheese.
Place under the broiler for 5 minutes until the cheese melts, remove the tacos from the oven, drizzle with Russian dressing; then serve immediately.
That's it! All the flavors you love in a Reuben sandwich in taco form. My family loved these and I can't wait to make them again after our St. Patrick's Day dinner. ~Enjoy!

- 8 oz. Diced Corned Beef (2 cups)
- 1 c. Sauerkraut
- 4 Slices Swiss Cheese
- 4 tbsp. Russian Dressing
