Tomato and Fresh Mozzarella Salad or Caprese Salad is so easy to make, yet the flavor is so distinct it's popular worldwide. It's one of my favorite flavor combinations and you will find several recipes utilizing these flavors.

Some of them include Caprese Stuffed Chicken Roll Ups, Caprese Stacks with Pan Seared Prosciutto and Caprese Flatbread, but there are so many more!

What's the difference between fresh and regular Mozzarella cheese?

Fresh mozzarella is hand molded into balls, stored in brine or whey until it is used. Processed mozzarella has less moisture, a longer shelf life, and is easily sliced, cubed, or grated. It's also usually less expensive. 

When we were in Sorrento, Italy several years ago, we saw fresh mozzarella being made first hand. The flavor was amazing and you can definitely tell the difference between the two by the texture.

How do you make Tomato and Fresh Mozzarella Salad?

For this recipe you'll need plum or Roma tomatoes, fresh Mozzarella cheese, fresh basil, red onion, balsamic vinegar, EVOO, Kosher salt and black pepper. 

Start by dicing the tomatoes into bite sized pieces; then add them to a medium sized bowl. Next, dice the mozzarella, onion and basil; then add it to the bowl. 

Combine the vinegar, oil, salt and pepper in a small bowl; then whisk until well blended. Pour over the tomatoes and mozzarella, mix together; then refrigerate until you're ready to serve. Serve chilled within 3 days since you're using fresh cheese. ~Enjoy!

Ingredients
  

  • 5 plum or roma tomatoes
  • 16 ounces fresh mozzarella cheese
  • ¼ cup chopped fresh basil
  • 2 tablespoons chopped red onion
  • ¼ cup balsamic vinegar
  • ½ cup Extra Virgin Olive Oil
  • ¼ teaspoon Kosher salt
  • ⅛ teaspoon black pepper

Instructions
 

  • Start by dicing the tomatoes into bite sized pieces; then add them to a medium sized bowl. Next, dice the mozzarella, onion and basil; then add it to the bowl.
