Twice Baked Stuffed Potatoes

My family loves Twice Baked Potatoes; however, if you cook the potatoes in the oven it can take a long time to make. That's why I cook my potatoes in the microwave; especially if I'm serving them during the weeknight. 

I've made a few variations like Garlic and Rosemary Twice Baked Potatoes, Antipasto Twice Baked Potatoes and Twice Baked Lime Sweet Potatoes over the years. But there is something to be said about a basic recipe.

Technically they're very similar to Loaded Mashed Potato Gratin; only the filling goes back into the potato skins instead of a casserole dish.

How do you make Twice Baked Potatoes?

For this recipe you'll need Russet baking potatoes, milk, sour cream, shredded Cheddar cheese, scallions, butter, Kosher salt and black pepper. 

Start by scrubbing the potato skins under warm water with a vegetable brush to remove excess dirt. Place them on a microwave safe dish lined with paper towels; then pierce the skin of each potato with a fork or the tip of a sharp knife for steam to escape.

Microwave on high for 5 minutes, turn potatoes over; then cook for another 5-8 minutes or until fork tender.

Cut each potato in half lengthwise and scoop out the potato flesh with a spoon into a separate bowl. Save the skins and place on a baking sheet.

Next, add the remaining ingredients and mix with a hand mixer until smooth. Fill the potato skins with the mixture; then place in a preheated 425 degree F oven for 15 minutes or until the tops are golden.

Can you add other toppings?

Absolutely! You can try any of the following: 

  • Other cheeses like Swiss, Havarti or American
  • Add bacon, ham or Prosciutto
  • Use heavy cream or half & half instead of milk
  • Try Red Bliss or Yukon gold potatoes (cooking times may vary slightly)

Like I said, my family just loves these Twice Baked Potatoes and they're ready in under 30 minutes. The recipe serves four and makes a tasty side dish with steak, chicken or pork as a main entree. ~Enjoy!
