Cucumber Salad made with seedless English cucumbers & red onion in an Asian honey mustard dressing is a tasty light salad that's perfect for cookouts.
Summer is one of my favorite times of the year for many reasons, but mainly because it's a time when fruits and vegetables are growing in abundance.
I don't harvest much myself because the deer would eat everything I would try to plant, so I just grow tomatoes and herbs on my deck.
However, I wish I could grown more because I LOVE cucumbers; especially when paired with a light dressing like this Asian Cucumber Salad.
Lucky for me, I live in the highlands of New Jersey where farm stands pop up this time of year all over the place.
Recently, I had purchased a few English cucumbers and wanted to make a new salad with them. We prefer the English cucumbers because they're seedless.
Since my husband suffers from diverticulitis, I try to cut back on seedy fruits and vegetables as much as possible. Some of the best salads are the simplest ones to make too, like this Asian Cucumber Salad.
This salad is also perfect for those Summer cookouts because it's dairy and gluten free. ~Enjoy!
How do you make Asian Cucumber Salad?
To make the dressing, combine honey, rice wine vinegar, Dijon mustard, mayonnaise and a little sesame oil in a bowl and whisk until smooth.
You can also add the ingredients to a mini food processor and blend; which is the method I prefer using.

If you'd like, you can also garnish with some sesame seeds, but like I mentioned we don't like to add any unnecessary seeds to our diet.

Asian Cucumber Salad
Ingredients
For the Asian Cucumber Salad
- 2 English seedless cucumbers, skins washed
- ¼ cup thinly sliced red onion
- Prepared Asian Dressing
For the Asian Dressing
- 3 tablespoons honey
- 1 ½ tablespoons rice wine vinegar
- ¼ cup mayonnaise
- 1 teaspoon Dijon mustard
- ⅛ teaspoon sesame oil
- sesame seeds (optional garnish)
Instructions
For the Asian Cucumber Salad
- Combine all ingredients in a bowl and mix well to coat. Keep refrigerated until ready to serve.
For the Asian Dressing
- Combine the honey, vinegar, mustard, mayonnaise and oil in a bowl and whisk until smooth. (You can also add the ingredients to a mini food processor and blend.)
