Cuori di Carciofi Fritti (Italian Fried Artichoke Hearts)

Cuori di Carciofi Fritti or Italian Fried Artichoke Hearts make a deliciously, crunchy snack. Pair with your favorite dipping sauce!

I have a healthier version of fried artichoke hearts already on the blog, but after trying a fried version at one of our favorite local restaurants in Florida I just had to make them at home. 

Cuori di Carciofi Fritti are made by dipping quartered artichoke hearts into a mixture of flour and cornstarch, eggs and breadcrumbs; then fried until golden brown. 

The restaurant served these artichoke hearts with a Chipotle Ranch dipping sauce; which is how I made this recipe. However, I think a nice lemon garlic aioli would taste even better!

This recipe yields approximately 24 artichoke hearts and though not the healthiest option, they taste amazing with their crunchy outer coating. ~Enjoy!

Suggested Equipment

  • Can Opener
  • Mesh Strainer
  • Three Dipping Bowls
  • Large Nonstick Skillet
  • Slotted Spatula or Tongs
  • Serving Platter

Ingredients Needed

Quartered Artichoke Hearts: Use the artichokes in a can, not the ones that are marinated. 

Large Eggs

All Purpose Flour

Cornstarch

Breadcrumbs: You can use Italian flavored breadcrumbs or panko for an extra crunchy coating. 

Canola Oil: You can also use vegetable oil.

How do you make Cuori di Carciofi Fritti?

Drain the artichoke hearts from the can, add them to a mesh strainer; then run under cold water and dry on paper towels. 

Gather three dipping bowls and fill one with the flour and cornstarch. In the second bowl, add the eggs and whisk; then add the breadcrumbs to the third bowl.

Dip each artichoke heart first into the flour mixture, then the egg and finally the breadcrumb and place on a plate. Repeat for all. 

Add the oil to a large nonstick skillet and heat over medium high heat. The oil is hot enough when you add a drop of water to the pan and the oil "pops". 

Carefully place the artichoke hearts into the oil and cook for approximately 5-6 minutes, flipping halfway until all sides are golden brown. You may need to do this in batches so as not to overcrowd the pan while cooking.

Line the plate with paper towels so that when the artichoke hearts are done, you can transfer them back to the plate to drain off any excess grease. 

When ready to serve, add the Cuori di Carciofi Fritti to a serving platter along with your favorite dipping sauce and serve hot.

Dipping sauces

To make Chipotle Ranch Dipping Sauce, combine ½ cup of store bought Ranch Dressing and ½ tablespoon of Chipotle seasoning. 

Some other dipping sauces include Sriracha Lime Aioli, Rosemary Garlic Aioli or Lemon Garlic Aioli.

  • 1 cup panko breadcrumbs
  • ¼ cup canola oil (+ more if needed for frying)
