Guacamole Pasta with Sausage

Creamy pasta tossed with ground sausage and common guacamole ingredients like garlic, onion, avocados, tomatoes and jalepeno peppers.

I wanted guacamole on Super Bowl Sunday, but never got around to making it; so I was left with four overly ripe avocados.

Instead of making guacamole with it during the week, I decided to make a meal out of it and combined it with some pasta and sausage. 

This Guacamole Pasta with Sausage was so quick and easy to make and I loved the way the fresh cilantro, lime and avocado made a creamy sauce.

It was a definite hit for dinner with the family! You could also use pre-made guacamole if you have some left over or use chicken instead of sausage, I bet it would taste just as good. 

Ingredients Needed

For this recipe you'll need the following ingredients: 

Pasta: I used fusilli; which is my favorite, but you can use any type of pasta in this recipe. 

Extra Virgin Olive Oil

Italian Sausage: You can use ground sausage or links with the casings removed. I used pork sausage, but you can use chicken or turkey sausage. If you don't like sausage, you can use chicken too!

Red Onion

Garlic

Jalepeno Pepper

Lime

Chopped Fresh Cilantro

Tomatoes

Avocados

Chicken Broth

How do you make Guacamole Pasta with Sausage?

Bring a large pot of water to a boil; then cook pasta according to package directions. While the water is boiling, you can make the sauce. 

Heat the oil in a large nonstick skillet over medium high heat; then add the sausage. Break apart into small pieces; then cook until no longer pink (4-6 minutes). 

Next, add the onion, garlic, jalepeno, lime zest and juice and cilantro. Saute until the onions become translucent; then add the tomatoes and avocado;mix well. Set aside until your pasta is cooked.

After draining the water from the pasta, put it back in the pot and add the sausage mixture and the chicken broth, mix well until all ingredients have combined.

Ingredients
  

  • 1 pound pasta (fusilli, rotini, etc)
  • 1 tablespoon extra virgin olive oil
  • 1 pound ground italian sausage
  • ½ cup diced red onion
  • 1 clove garlic (minced)
  • 1 tablespoon finely chopped jalepeno pepper
  • 1 lime (zest and juice)
  • 2 tablespoons chopped fresh cilantro
  • 1 cup diced tomatoes
  • 4 ripe avocados (pit removed and diced)
  • ½ cup chicken broth

    @Jenn Thanks~Put them in a brown bag, that should help ripen them!
    @Lisa I probably would have preferred chicken if I didn't already have the sausage out and defrosted. Ooohh, marinate the chicken in some lime juice and a little oil first, then grill it before throwing it in. That would be good! 😉

    Ah, this is PERFECT!! I have 3 avocados home that I was going to use for guacamole on Sunday, but they were too hard.

    This sounds delicious, Carrie! I have a weird hang up about Italian sausage, but I would definitely try this with chicken! 🙂
