These Oatmeal Banana Cookies made with fresh bananas, old fashioned oats and white chocolate chips are a tasty treat any day of the week.
As much as my family loves my banana bread, every now and then I try to utilize those over ripe bananas to make something else like these Oatmeal Banana Cookies.
These cookies were soft and chewy on the inside-more like a cake than a cookie. Serve with a cold glass of milk or enjoy on their own. This recipe yields 24 cookies and can be ready in 30 minutes. ~Enjoy!

Ingredients Needed
To make these oatmeal banana cookies you're going to need the following ingredients:
Softened Butter: I used lightly salted butter, but you can use unsalted.
Light Brown Sugar
Egg
Vanilla Extract
Mashed Overripe Bananas: You can add the bananas to a bowl; then mash them with a fork.
All Purpose Flour
Baking Soda
Old Fashioned Oats
White Chocolate Chips: You can substitute other chocolate if you'd like.
How do you make Oatmeal Banana Cookies?
Start by preheating the oven to 350 degrees F; then line two baking sheets with parchment paper.
In a bowl, cream together the butter and sugar with a wooden spoon; then add the egg, vanilla extract and mashed bananas; mix well.
Next, mix in the flour, baking soda and oats; then fold in the chocolate chips. Using a 2-tablespoon cookie scoop, drop the cookie dough onto the baking sheets about 1-inch apart.
Place the pans in the oven and cook for14-16 minutes or until the centers are puffed up and the edges are lightly browned. Remove from oven, let cool for 5 minutes; then transfer to a cooling rack to completely cool.
Storage
Once cooled you can store these oatmeal banana cookies in an air tight container at room temperature for up to 5 days or freeze them for up to 3 months.
