This baked oatmeal with peaches and cream is a warm, comforting breakfast that tastes like a cozy dessert.

Baked oatmeal is deliciously easy to make and saves a ton of time during busy weekday mornings. You can make it ahead of time; then just reheat for a quick breakfast before heading out the door. 

With the addition of sweet ripe peaches, this baked oatmeal will be a new favorite way to start your day. ~Enjoy!

  • Mixing Bowl

  • Mixing Spoon

Ingredients Needed

To make this recipe you're going to need the following ingredients: 

Whole Grain Oats: Please do not use quick oats or steel coat oats in this recipe.

Half & Half: You can also use heavy cream, milk or any milk derivitive; though it might not be as creamy. 

Large Egg

Vanilla Extract

Granulated Sugar

Diced Peaches: You can use fresh peaches that have been peeled, pitted and diced, frozen peaches that have been defrosted or canned peaches that have been rinsed under cold water and diced into small bite sized pieces. 

Cooking Spray

Confectioners Sugar (optional garnish)

How do you make Peaches and Cream Baked Oatmeal?

Start by preheating the oven to 375 degrees F; then spray a 1-quart baking dish with cooking spray. Combine the half & half, egg, vanilla extract and sugar in a bowl; then whisk until smooth.
 
Next, add the oats and peaches and stir with a spoon until combined. Add the mixture to the baking dish, place in the oven and cook for approximately 45 minutes or until the oatmeal is firm. Remove from the oven, garnish with confectioner's sugar if desired and serve hot. 
 

Storage and Reheating

Allow the baked oatmeal to cool completely; then cover with foil or saran wrap and refrigerate for 3-5 days. To reheat, remove a portion and place in a microwave safe dish; then cook on high for 1 minute.

  • ¼ cup granulated sugar
  • 1 cup diced peaches
