Are you forever looking for a new weeknight dinner idea? One that is so easy and quick you can hardly even call it a recipe. I know I am.
I scour magazines, Facebook and Pinterest on a weekly basis looking for something new to inspire me and recently came across this recipe for Cheeseburger Gnocchi from Delish. And boy did it look "delish" to me and I knew my family would love it!
Oddly enough, I had just purchased some frozen gnocchi that happened to be on sale the day before. I like to make my own, but with them being 3 packages for $5, I couldn't pass it up.
The other thing that caught my attention is that it's made all in one skillet on top of the stove in less than 30 minutes. FABULOUS!!!
I did tweak the original recipe slightly because even though I usually have a can of fire roasted tomatoes in the house, I must have used up my last can and forgot to buy more so I had to improvise with what I did have.
How do you make Cheeseburger Gnocchi?
For this recipe, you'll need extra lean ground beef (you could substitute ground chicken or turkey), plum tomatoes, scallions, tomato paste, beef broth, frozen gnocchi (if you use fresh, it will take even less time to cook!), heavy cream (or half and half is fine) and shredded Cheddar cheese.
Start by getting out a large skillet and heating up the pan on top of the stove; then add your ground beef. Brown the meat until it's no longer pink; then add your diced tomatoes and scallions.
Cook 1-2 minutes until the tomatoes start to soften; then add tomato paste, beef broth, and your gnocchi. Cover the skillet with the lid and cook 5-6 minutes until the gnocchi is cooked and no longer frozen.
Finally, add your heavy cream and cheddar cheese. Mix well until all the cheese has melted; then season with salt and pepper.
When this recipe was done, I took a picture of it I shared it on my personal Snapchat story and had so many of my friends drooling and asking for the recipe.
Seriously, my daughter saw it while she was eating lunch at school and her friend face-timed me to ask if he could come over for dinner. 🙂 This Skillet Cheeseburger Gnocchi was amazing, but really filling.

Skillet Cheeseburger Gnocchi
Ingredients
- 1 ¼ lb. Extra Lean Ground Beef
- ½ c. Diced Tomatoes
- ¼ c. Scallions, chopped
- 6 oz. Tomato Paste
- 1 ½ c. Low Sodium Beef Broth
- 14 oz. Frozen Gnocchi
- ½ c. Heavy Cream
- 4 oz. Shredded Cheddar Cheese
- Kosher Salt & Black Pepper, to taste
