Zucchini and Ricotta Turkey Meatloaf (Gluten Free)

Turkey meatloaf made with zucchini, ricotta cheese, grated Pecorino Romano cheese and oats makes a deliciously moist, gluten free meal.

Meatloaf is one of our favorite weeknight meals because it's super easy to make. You just add all of the ingredients to one bowl, mix and bake. That's it! 

It's also versatile and can be made with any version of ground protein like beef, pork, chicken or turkey. With this recipe, I opted for extra lean ground turkey and to help keep it moist, I added some ricotta cheese and shredded zucchini. 

This Zucchini and Ricotta Turkey Meatloaf was so flavorful and by using ground oats instead of breadcrumbs, it's also gluten free. ~Enjoy!

Ingredients Needed

To make this meatloaf you're going to need the following ingredients: 

Extra Lean Ground Turkey

Whole Grain Oats (finely ground)

Egg

Shredded Zucchini: You'll need½ cup which is approximately a small zucchini. 

Minced Garlic

Chopped Fresh Basil

Ricotta Cheese: You can use whole or part skim. 

Grated Pecorino Romano Cheese

Kosher Salt

Black Pepper

Prep the Ingredients

Start by gathering all of your ingredients and prep them for use in the recipe; then preheat the oven to 350 degrees F. 

First, add the oats to a mini food processor and pulse until finely ground. Next, using a box grater, shred the zucchini. 

How do you make Zucchini and Ricotta Turkey Meatloaf?

Add the ground turkey, pulsed oats, shredded zucchini, an egg, garlic, basil, ricotta and grated cheeses, salt and pepper to a bowl; mix well. 

Place the mixture in a baking dish; then shape into a loaf. Place the pan in the oven and cook 45-50 minutes or until the internal temperature is at least 165 degrees F.

Allow to rest for 5 minutes out of the oven; then cut into 6 slices.

Serving Suggestions

In keeping with a gluten free meal, here are some delicious gluten free side dish options to serve with this turkey meatloaf. 

Vegetables: Balsamic Roasted Zucchini and Mushrooms, Garlic Roasted Asparagus or Green Beans with Tomato and Garlic

Side Dish: Asiago Risotto, Butter and Parsley Smashed Potatoes or Cream Cheese and Chive Mashed Potatoes

  • 1 pound extra lean ground turkey
  • 1 cup whole grain oats

  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh basil
