Sausage Patties made with ground pork, maple syrup and fresh herbs are deliciously easy to make and a great addition to any breakfast.
Years ago I came across a recipe for these Breakfast Sausage Patties in a magazine. I saved it in my "to make" folder for years and never got around to it.
As I was cleaning up old files, I found the recipe and decided now was a great time to experiment with ways to expand the flavor.
Though of love breakfast sides like potatoes & chorizo and bacon, sausage links are my "go to" when eating at a NJ diner.
Because my husband and I are also dieting, those links aren't the healthiest so I decided to make these homemade sausage patties instead.
Besides, it's always better when you can pronounce the ingredients in the food you're eating! This recipe makes 12 sausage patties and can be ready in about 15 minutes.

Breakfast sausage is a type of fresh pork sausage that is commonly served in the United States. Its main flavor comes from black pepper and sage, but you can add other ingredients and spices to enhance the flavor.

Ingredients Needed
For this recipe you'll need the following ingredients:
Ground Pork: Because this was my first attempt at making breakfast sausage, I stuck with pork; however, you can also used ground chicken or turkey.
Maple Syrup: I used pure maple syrup, but if you're like my kids who happen to love sugar free syrup, go ahead and swap it out for your favorite.
Minced Garlic
Fresh Herbs: In keeping with the traditional breakfast sausage, I opted for a combination of fresh sage and thyme; however, you can add any combination of fennel, rosemary, or paprika.
Salt
Pepper
Cooking Spray: A thin layer of a light oil (like canola) can also be used, but I wanted to reduce as much added fat as I could in this recipe.
How do you make Breakfast Sausage Patties?
Start by combining the ground pork, maple syrup, garlic, herbs, salt, and pepper in a bowl; then mix well.
Preheat a large nonstick skillet over medium high heat; then spray with cooking spray. Divide the pork into twelve portions; approximately 2-tablespoons each. I found it best to form them like you would a meatball.
Place as many as you can fit into the pan; then flatten them a bit to form a disc. Spray the tops with cooking spray; then cook for approximately 2 ½ minutes per side.
Using a meat thermometer, ensure that the internal temperature is at least 160 degrees F. Remove from the pan and place on a paper towel lined plate to remove any excess oil; then repeat until all of the sausage has been cooked.
Serving Suggestions
These sausage patties can go with just about any of your favorite breakfast meals like Oatmeal Banana Pancakes, Ham, Apple and Cheddar Breakfast Strata, Spinach, Mushroom and Havarti Egg White Omelette or Maple Pecan French Toast Casserole.
