Years ago I made a similar recipe for Brie en Croute with Apples and Pecans when hosting Bunco one night in the Fall.
It was delicious, but the recipe got lost with the transition to a new blogging platform a few years ago and I had forgotten all about it.
Until recently that is when I decided to make this recipe again for us to snack on one Sunday afternoon.
Brie is one of our favorite cheeses due to its mild flavor. In fact, one of G's favorite things to eat when visiting Epcot at Walt Disney World was their Turkey and Brie Baguette in France. Nothing fancy, but she just loved it!
Since then, we always seem to have Brie in the house to use on sandwiches, flatbreads and incorporated into our favorite main meals.
What is En Croute?
En Croute sounds so fancy, but really it just means 'baked in a pastry crust'. With this recipe, I used refrigerated Crescent Roll Dough to get that flaky, golden crust.
This recipe for Brie en Croute with Apples and Pecans serves about 6-8 people as an appetizer and can be ready in less than 30 minutes.
It's super flavorful with the combination of apples, cinnamon, pecans and honey too. You can serve it alone or with your favorite crackers.

For this recipe you'll need the following ingredients:
Brie Cheese: I used a small 8-ounce wheel of cheese for this recipe.
Honey
Refrigerated Crescent Roll Dough: Years ago you could only get Crescent Roll Dough pre-stamped with cuts to make the rolls. Now, you can get whole sheets without any perforations.Either one is fine, just make sure you cover the Brie in its entirety; including top, bottom and sides. You can usually find this in the refrigerated section of your local grocery store.
Cooking Spray
How do you make Baked Brie en Croute?
Preheat oven to 425 degrees F; then spray a baking dish or sheet pan with cooking spray.
Core, peel and dice the apples; then add them along with the pecans to a mini food processor and pulse until finely chopped. Next, add the honey and cinnamon; then pulse again until a paste is formed.
Place the Brie on top of a clean surface (like a cutting board); then top with the apple mixture. Cover the Brie with the dough; making sure that all of the cheese is covered so it doesn't ooze out onto the baking dish.
Place the wrapped wheel of cheese, seam side down in a baking dish or sheet pan; then bake for approximately 15-20 minutes or until crust is lightly browned.
Remove from the oven, transfer to a cheese serving platter and serve hot.

- 1 ½ cups diced mcintosh apples (approximately 2)
- ½ cup chopped pecans
- 2 tablespoons honey
- ¼ teaspoon ground cinnamon
- 1- (8-ounce) package refrigerated crescent roll dough
