Buffalo Chicken Meatballs

Buffalo Chicken Meatballs made with extra lean ground chicken, celery, buffalo wing sauce and panko breadcrumbs.

Whether you like your meatballs spicy hot or on the mild side, served for dinner or as an appetizer, these meatballs are going to be a new favorite!

These chicken meatballs do not require a lot of ingredients, are simple to make and are perfect any time of the year.

The kids will love them - especially if dipping them into some Ranch or Bleu Cheese dressing!

Made as an appetizer, this recipe yields 24 meatballs; however, you can make them larger or even shape the mixture into a delicious meatloaf. ~Enjoy!

Ingredients Needed

To make these meatballs, you're going to need the following ingredients: 

Ground Chicken: We used 98% extra lean ground chicken, but you can use any variety or even ground turkey. 

Minced Celery

Minced Chives

Buffalo Wing Sauce: Use any heat variety you like, we prefer mild. 

Panko Breadcrumbs

Large Egg

Kosher Salt

Gather and prep all of your ingredients!

How do you make Buffalo Chicken Meatballs?

Preheat the oven to 375 degrees F; then either line a sheet pan with parchment paper or spray with cooking spray. 

Add the ground chicken, minced celery, chives, buffalo wing sauce, breadcrumbs, egg and salt to a mixing bowl. Using your (clean) hands, mix until all of the ingredients are blended. 

Portion out the mixture using a tablespoon scoop; then roll into a meatball and place on the sheet pan. Repeat until you get twenty four meatballs. It's alright if they are close together as they will not spread. 

Bake for 18-20 minutes or until the internal temperature reaches at least 165 degrees F using an instant read thermometer. 

Serve alone or with your favorite dipping sauce like ranch, bleu cheese or garlic aioli.
