This Buffalo Chicken Stromboli made with pizza dough, shredded chicken, hot sauce, Bleu cheese dressing and Mozzarella cheese is perfect for a quick and easy weeknight meal or game day snack.
When the weather is dreary here in NJ this time of year, our favorite pastime on a weekend afternoon is to cuddle up on the couch with a good movie or football game and have what we call "picky" foods.
That is when we're not running all over the place! I wanted to test out a new recipe for the upcoming Super Bowl and decided on this Buffalo Chicken Stromboli.
The best recipes are those where you have all of the ingredients already in the house or can easily purchase at your local grocery store, don't you think? Over the holidays I purchased a refrigerated pizza crust by mistake instead of crescent rolls when I made Baked Brie.
They happened to be on sale if you purchased three and I picked up the wrong item. It happens. But that got me thinking about making a new flatbread or stromboli recipe.
What is a stromboli?
A Stromboli is similar to a pizza as you use pizza dough and top it with your favorite toppings. The only difference is that it is then rolled into a log, baked; then sliced into pieces before eating.
Stromboli's aren't to be confused with a calzone; which is similar, however the addition of ricotta cheese is used with other toppings as the filling and it's folded in half, into a semi-circle.
How do you make Buffalo Chicken Stromboli?
For this recipe you'll need refrigerated pizza crust, shredded cooked chicken, scallions, parsley, hot sauce, shredded Mozzarella cheese and Bleu Cheese dressing. You can use any precooked chicken that isn't breaded.
If you don't have any leftover chicken from a whole roaster chicken, you can purchase a Rotisserie Chicken at your local grocery store for around $5; then use what's left to make chicken salad.
Start by preheating the oven to 425 degrees F; then line a baking sheet with parchment paper or spray with cooking spray. Add the chicken, scallion, parsley, hot sauce, Mozzarella cheese and Blue Cheese dressing into a small bowl and mix until blended.
Open the refrigerated pizza dough and place on a clean surface, like a cutting board. Stretch the dough and roll it so that it's even in thickness; then top with the chicken mixture and spread evenly on top of the dough.
Roll the dough towards you to create a log, place on the baking sheet and pinch the ends shut with your fingers so the goodness doesn't ooze out. Drizzle some EVOO on top of the dough and place in the oven.
Bake for 15-20 minutes until the dough has puffed up and turned brown. Remove from the oven and cut into 16 slices. Serve hot with extra Blue Cheese Dressing.
This Buffalo Chicken Stromboli was ready in about 30 minutes and my family LOVED it! You can make it spicier by adding more hot sauce, but I chose to keep it on the milder side. Serve for dinner or as a snack. ~Enjoy!
