Indulge in this fruity Coconut Martini made with four ingredients. It's a cool and refreshing adult beverage on a hot Summer day.

I first shared this recipe for a Coconut Martini back in August 2011 after we returned from a Mediterranean cruise. So far I would have to sat that it was the one of the best vacations our family ever went on.

Besides seeing some of the most beautiful countries in the world like Italy, Spain, Croatia and Greece; we had a great time on the ship as well.

One of our favorite spots was this small bar where we would go before dinner to have a cocktail before dinner. 

There was this bartender, Susie who worked there every night and would make a new virgin cocktail for the girls to try.

One night she made us adults a special cocktail just for us called a Coconut Martini. Here they are back in the day with Susie and now they're 18 and 23..Yikes!

As many of you know, I prefer red wine over alcohol; however, every now and then my sweet tooth kicks in and I like to have one fruity drink.

This is one of my favorites and I just had to make and share it again because it's also so easy to make.

How do you make a Coconut Martini?

As with most cocktails you can increase or decrease the number of parts to suit how many drinks you'd like to make.

This recipe is so simple to adjust because it consists of four equal parts of coconut rum, amaretto, pineapple juice and orange juice.

For this recipe, I'll make one drink and you can move the servings up in the recipe card below by hovering over the serving size and sliding the bar to the right to increase. 

To make this cocktail, add ice to a cocktail shaker along with all of the ingredients. Shake well and pour into a martini glass; then garnish with an orange twist or a slice of pineapple. 

I had forgotten how refreshing this Coconut Martini recipe tasted and it reminded me of being on a tropical island. Better to think that then being stuck at home quarantined right? 😊 ~Enjoy!

  • 2 ounces coconut rum
  • 2 ounces amaretto
  • 2 ounces pineapple juice
  • 2 ounces orange juice
  • ice

  • Fill the cocktail shaker with ice; then add all of the ingredients. Shake well and pour into a martini glass.
