Key Limes: You'll need the zest and the key lime juice. When zesting the limes, make sure you're only using the green skin and not the white pith.
Large Eggs
Extra Virgin Olive Oil
Milk: I used whole milk, but can use reduced fat or alternative milk products like almond or soy.
All Purpose Flour
Baking Powder
Salt
Cooking Spray
Confectioners Sugar: Also known as 10-X or Powdered Sugar.
How do you make Key Lime Olive Oil Cake?
Preheat the oven to 350 degrees F; then coat the inside of a bundt pan with cooking spray.
Add the sugar and lime zest to the blender and pulse for 30 seconds. Add the lime juice, eggs, olive oil and milk; then blend until smooth.
Next, add the flour, baking powder and salt and pulse for 1 minute until the batter is smooth. Pour the batter into the greased bundt pan and bake for 30 minutes or until the top springs back.
Allow the cake to cool for 5 minutes; then transfer to a cooling rack to finish cooling completely. While the cake is cooling, combine the confectioners sugar and key lime juice. Mix well until the glaze is smooth; then drizzle on top of the cooled bundt cake.

- 1 ½ cups granulated sugar
- 1 tablespoon key lime zest
- ¼ cup key lime juice (approx. 4-5 key limes)
- 2 large eggs
- ¼ cup extra virgin olive oil
- ⅔ cup milk
- 1 ¼ cup all purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt

For the Key Lime Glaze
- ½ cup confectioners sugar
- 3 teaspoons key lime juice (approx. 1 key lime)
Instructions
For the Key Lime Bundt Cake

- Allow the cake to cool for 5 minutes; then transfer to a cooling rack to finish cooling completely. Drizzle the key lime glaze on top of the cooled bundt cake and cut into 8 pieces.
For the Key Lime Glaze
- Combine the confectioners sugar and key lime juice in a small bowl. Mix well until the glaze is smooth.
