Getting dinner on the table just got that much easier with my Weekly Meal Plan geared towards creating family friendly meals that are easy to make at home using simple ingredients and directions. Monday: Greek Chicken Salad

Greek Chicken Salad

This Greek Chicken Salad made with boneless chicken breasts combined with tomatoes, cucumbers, olives, Feta cheese, oregano, lemon juice and mayonnaise is deliciously flavorful and a fantastic way to repurpose leftover roasted or grilled chicken or turkey. Make a sandwich on your favorite bread or tortilla wrap or eat alone with crackers. It's perfect for those hot Summer nights when you don't want to cook.

Suggested Sides:  Tossed Salad

Tuesday: Rosemary Grilled Pork Skewers

Rosemary Grilled Pork Skewers

Rosemary Grilled Pork Skewers made with boneless center cut pork marinated in fresh lemon juice, garlic, and rosemary; then skewered with fresh garden vegetables and grilled to perfection. This marinade tastes great on chicken or fish too.

Suggested Sides: Garden Vegetable Risotto

*Tip: If you're using wooden skewers, soak them in hot water for 20 minutes prior to adding the meat and vegetables so they don't burn on the grill when cooking.

Wednesday: Creamy Chicken, Spinach & Mushroom Casserole

Creamy Chicken, Spinach & Mushroom Casserole

This Creamy Chicken, Spinach & Mushroom Casserole makes for the perfect weeknight meal. Prepare ahead of time and reheat for those busy weeknights too.

Suggested Sides: Tossed Salad and Lemon Basil Popovers

Thursday: Ratatouille Panzanella Salad

Ratatouille Panzanella Salad

Ratatouille Panzanella Salad made with fresh eggplant, zucchini, mushrooms, garlic & tomatoes tossed with toasted multigrain bread and a light Lemon Chardonnay Vinaigrette is so flavorful. It makes a deliciously flavorful meatless cold meal on a hot day.

Friday: Gab's Caprese Shrimp Stuffed Tomatoes

Gab's Caprese Shrimp Stuffed Tomatoes

Fresh garden tomatoes stuffed with shrimp, garlic, basil, mozzarella cheese and Italian breadcrumbs; then baked until golden brown. These tomatoes take about 30 minutes from start to finish and are so easy to prepare. Hey, if my 10 year old (at the time) could come up with this recipe and make these on her own, so can you. 😉

Suggested Sides: Mediterranean Quinoa Salad
