This salad brings together tender baby spinach, earthy roasted beets, creamy ripe avocado, and crunchy pine nuts.

The freshness of the greens pairs beautifully with the rich textures and bold flavors of the vegetables, all tied together when tossed in your favorite dressing.

Light yet satisfying, it's a colorful celebration of wholesome ingredients in every bite.

Ingredients  Needed

Fresh Baby Spinach

Beet: Cooked and either diced or sliced. You can also purchase them already cooked in the vegetable section of your local grocery store. If using fresh beets, see instructions below. 

Avocado: Sliced or diced

Nuts: Use your favorite sliced, chopped or whole nuts; I used some pignoli nuts. 

Salad Dressing: Use your favorite dressing likeHoney Balsamic Dressing, Applebee's Copycat Dressing or  Greek Vinaigrette

How do you make Spinach Salad?

Wash the spinach in a salad spinner or place in a colander, rinse under cold water; then drain and pat dry. 

Place the spinach in a salad bowl; then add the beets and toss with your favorite salad dressing. Finally, top with the avocado and nuts; then serve. 

Substitutions or Additions

Try adding other kinds of vegetables to this salad as well like tomatoes, cucumbers, peppers or onions. Or top with your favorite protein like grilled chicken or shrimp!

Cooking Fresh Beets

If using fresh beets that have to be cooked in a recipe, start by placing the beets in a saucepan and cover with water. Bring to a boil and let simmer until fork tender; approximately 30-45 minutes depending on the size/quantity.

Allow to cool completely, peel skin using a pairing knife; then slice or dice and keep refrigerated. It's best to handle beets with disposable gloves or they will turn your hands pink. 

You can make these beets up to 3 days ahead and keep refrigerated or keep them stored in the freezer for up to 3 months.

  • 1 pound fresh baby spinach
  • 1 cup diced beets
  • 1 avocado (diced or sliced)
  • ยผ cup pignoli nuts (or your favorite nuts)
  • ยผ cup vinaigrette salad dressing (+/-)

Instructions
 

  • Wash the spinach in a salad spinner or place in a colander, rinse under cold water; then drain and pat dry.

    This looks great Carrie, and not sure if you know, but if you put a splash of vinegar i the pan with the beets , it prevents from staining your pan! xo Bia
