I always over cook when entertaining. It's a habit I've never outgrown whether I'm cooking for 2 or 20. The best part about overcooking is having leftovers.
Since I was never a big fan of eating the same thing twice, I've managed to create new recipes using those leftovers.
In the past if I'd made too much steak, I'd either eat it on top of salads, make soup or a sandwich or even pot pie. This time I made these steak bites with the leftover rib eye steaks we had recently.
These Garlic Lemon Butter Steak Bites were delicious and melted in your mouth. The lemon really adds a nice, tart flavor and the crushed red pepper adds a bit of heat.
This recipe serves 2, is gluten free and low carb/keto diet friendly and can be ready in about 15 minutes for a quick weeknight meal.
What kind of steak is best for steak bites?
You'll want to use steak that is tender to begin with or one with a lot of fat marbling so that the meat doesn't get tough when cooking. I prefer rib eye steaks, but sirloin or filet mignon would work as well.

To make these Garlic Lemon Steak Bites you'll need the following ingredients:
Rib Eye Steak
Butter
Extra Virgin Olive Oil
Garlic
Lemon
Crushed Red Pepper
Kosher Salt
Parsley (optional for garnish)
How do you make Garlic Lemon Butter Steak Bites?
Pat the steak dry with paper towels to remove excess moisture; then cut them into bite-sized cubes. Heat a large skillet over medium high heat; then add the butter and olive oil.
When the butter has melted, add the cubed steak. Cook 4-5 minutes; stirring so that all sides are browned. If you prefer your steak on the well done side, you can cook a little longer.
Add the garlic and cook for another minute; then add the lemon zest, lemon juice, red pepper and salt. Mix together, transfer to a serving bowl or place the skillet on a hot plate; then serve.
Serving Suggestions
You can serve these steak bites over rice, pasta or mashed potatoes. If you're like us, serve with a tossed salad and warm crusty bread to sop up the extra sauce!
Storage
You can store these steak bites in an airtight container in the refrigerator for up to 3 days.
To reheat, add the steak bites to a skillet and heat until warmed. Cooking too long will result in cooking the steak further.
