Making meatloaf with ground chicken is a little healthier and this version made with a Horseradish Cheddar cheese, spinach and garlic is super flavorful.

Lately I've been on a horseradish kick and love it on pizza, sandwiches, roasts, mixed in with vegetables, and now even in this Horseradish Cheddar Chicken Meatloaf. It really adds an extra level of heat to your recipes without being totally overpowering.

What does horseradish taste like?

The horseradish root has a strong flavor and has a combination of being hot, spicy and peppery. It's not spicy like hot peppers (jalepeno) that can burn the mouth and tongue, but you sense the flavor through the nose and sinuses.

Now they even incorporate horseradish directly into cheese; which I LOVE because it makes a great snack and really helps to loosen my stuffy nose. 

As I've mentioned before, we eat a LOT of chicken; whether it's in parts, whole roaster or ground. So I'm always looking for the "next best thing" so to speak and find new ways to make dinner more interesting.

How do you make Chicken Meatloaf?

Though we're not following a strict gluten free or Keto diet, we do try to limit our carb intake whenever possible. This meatloaf fits into those categories because there is no bread crumbs; which sometimes tend to dry out your typical meatloaf.

When using ground chicken, I find it's sometimes best to omit bread altogether. For this recipe, you'll need ground chicken, grated Horseradish Cheddar cheese, one large egg, fresh chopped baby spinach and minced garlic.

The cheese is pretty commonplace now and I've seen it in several local supermarkets.

Horseradish Cheddar Chicken Meatloaf

If you can't find it you can substitute white cheddar cheese and prepared horseradish to get the same flavor. You can also substitute ground turkey or extra lean ground beef in place of the chicken. 

Combine all ingredients in a mixing bowl, form into a loaf shape; then put in an oven safe baking dish. Place the dish in a preheated 350º F oven for 45 minutes or until the internal temperature reaches 180º F when a meat thermometer is inserted into the center.

Slice the meatloaf into five slices; then serve with your favorite side dishes like Horseradish Cheddar Cauliflower Gratin and Sour Cream & Chive Yukon Gold Mashed Potatoes.

Ingredients
  

  • 1 lb. Ground Chicken
  • ½ c. Horseradish Cheddar Cheese, shredded
  • 1 large Egg
  • 1 c. Baby Spinach, rinsed, chopped
  • 1 cloved Garlic, minced

Instructions
 

  • Preheat oven to 350º F.
  • Combine all ingredients in a mixing bowl, form into a loaf shape; then put in an oven safe baking dish.
  • Place in the oven for 45 minutes or until the internal temperature reaches 180º F when a meat thermometer is inserted into the center. 

Notes

You can substitute:
  1. Shredded White Cheddar cheese and 1 tablespoon prepared horseradish to get the same flavor.
  2. Ground turkey or extra lean ground beef in place of the chicken.
