Apple Cider Roasted Pork Loin

Since I don't eat seafood, I tend to eat a lot of chicken and center cut pork loin or chops. After all it is the other white meat right? We also tend to make a roast on Sunday afternoons for Sunday dinner. 

Usually I alternate between whole roasted chicken, roast beef, and pork like this Apple Cider Roasted Pork Loin. However, occasionally I'll make a lasagna, corned beef, brisket or a standing rib roast on special occasions!

I love the flavor of apples and cinnamon and the apple cider helped to keep the meat super moist and so flavorful. My pork loin was 2-pounds and served 2-4 people.

  • 1-Quart Oven Safe Baking Dish
  • Carving Board
  • Carving Knife

Sliced apple cider pork

Ingredients Needed

For this recipe you'll need the following ingredients: 

Boneless Center Cut Pork Loin: This recipe would also work with a whole roasted chicken, chicken thighs, pork chops or a pork crown roast. 

Apples: I cored McIntosh apples; then sliced them into 1-inch rings. 

Apple Cider

Garlic Powder

Kosher Salt

Black Pepper

How do you make Apple Cider Roasted Pork Loin?

Preheat oven to 350 degrees F. Core and slice the apples into 1-inch rings; then line the bottom of your baking dish and place the pork loin on top of the apples. 

Pour the apple cider over the meat; then season the top of the meat with garlic powder, salt and pepper. Roast in the oven 50-60 minutes or until the internal temperature reads at least 145 degrees F.

I take mine out at 150 degrees F; then allow it to rest 10 minutes to finish cooking before carving. 

Serving Suggestions

Here are a few serving suggestions: 

Starch: Apple Cranberry Stuffing, Creamy Garlic and Herb Mashed Potatoes, or Pumpkin and Sage Risotto

Vegetable: Garlic Roasted Asparagus, Roasted Broccoli, Spinach Soufflé, Cinnamon Carrot Sticks, Green Bean Casserole or Whiskey Cinnamon Mashed Butternut Squash

    Wasn't able to use the slow cooker method as there wasn't enough time, so the oven method had to happen.

    My pork loins, bought from Costco, were quite thick, but we've had the before and they were fine. I firstly set out the sliced apple in the casserole dish, then fried the onion (cut into rings) and later added the crushed garlic (fried in Olive Oil). I added the onion and garlic to the dish. I then fried each joint on every side, to brown and seal. After putting the joints in the dish I then poured in the dry apple cider and cooked on 180 c for 1 hour 30 minutes. The joints were left to settle and the cider/onion/apple was used to make the gravy (using chicken gravy granules).

    Served with carrots, cabbage and beef dipping roasted potatoes.

    I must say, it was the nicest meal I have had in a long time. The pork had cooked perfectly in the cider and the gravy was something else and complimented the vegetables perfectly.

    I'll be doing this again quite soon as everyone enjoyed it.
