Pepperoni Bubble Loaf pull apart bread stuffed with spicy pepperoni and Mozzarella cheese; then brushed with a buttery Parmesan herb topping.
Years ago my mother's childhood best friend gave me a recipe for a bubble loaf and it's been sitting in my recipe box ever since.
Her recipe used homemade dough made from dry yeast, but since I'm impatient I didn't want to wait for the dough to rise.
The dough would normally would take 2 hours to rise, so I decided to make a shortcut version of this Pepperoni Bubble Loaf.
Super Bowl is approaching and for us it's all about the appetizers; similar to New Year's Eve celebrations. We put the game on and forgo "real food".
Instead we indulge in appetizers like pigs in a blanket, spinach dip, sun dried tomato puffs, hummus, nachos and chips with dip. This year I wanted to test drive a new appetizer recipe and it was so good, I can't wait to make it again.
What is a Bubble Loaf?
Bubble Loaf is also known as Bubble Bread or Pull Apart Bread. It's made from tiny pieces of bread or dough that are either plain or stuffed with meats, cheeses or vegetables; then topped with some sort of buttery topping.
They're great to serve when feeding a crowd, because you can pull apart each individual piece for a delectable bite. We served our with marinara dipping sauce.
Equipment Needed
Bubble Loaves are usually made with a bundt pan that are filled all the way to the top. It's great if you're only serving this as an appetizer for many people.
Since we're a family of four, I wanted to make something a little smaller in size; especially since we usually serve other items as well.
I used an Angel Food Cake Pan, but only made one layer; then placed it on top of a baking sheet to catch any drippings. This will still give you the hole in the middle to add your dipping sauce.

- Sheet Pan
- Pastry Brush
- Small Bowl
- Kitchen Shear
Ingredients
For this recipe you'll need the following ingredients:
- refrigerated pizza crust dough; cut into 24 pieces
- sliced pepperoni
- mozzarella string cheese; cut into 24 pieces
- melted butter
- grated parmesan cheese
- italian seasoning
How do you make Bubble Loaf?
Preheat oven to 375 degrees F; then spray the angel food cake pan with cooking spray. Open the tube of pizza crust; then using your kitchen shears, cut into 24 pieces.
Take one piece of the dough and add a slice of pepperoni and a piece of cheese in the center; then pinch the ends together to form a ball.
Add the dough ball seam side down in the pan; then repeat for all 24 pieces filling up the bottom of the pan. In a small bowl, combine the melted butter Parmesan cheese and Italian seasoning.
Brush the mixture on top of the dough, covering all pieces; then place the pan on a sheet pan and bake for 30-35 minutes until the dough has risen and is lightly browned.
Place on a serving platter with heated sauce in the middle; then serve hot immediately.

- 4 mozzarella string cheese, cut into 24 pieces (6 pieces per stick)
- 4 tablespoons melted butter
- ¼ cup grated parmesan cheese
- 1 tablespoon italian seasoning
