Summer is here and though I'm usually partial to red wine, this Rosemary Limoncello Spritzer is so light and refreshing. I think it may be my new favorite warm weather drink!

What is Limoncello?

Limoncello is an Italian lemon liqueur made in Southern Italy. It was delicious and I make a homemade version of limoncello around the holidays each year too.

What does Limoncello Taste Like?

Limoncello is made with lemons and a higher proof alcohol; like grain or vodka. It's tart, citrusy, and sweet and is traditionally drunk as an after dinner drink to help aide digestion.

How do you make a Rosemary Limoncello Spritzer?

For this recipe you'll need Limoncello, vodka, champagne, coconut water and a simple syrup made with fresh rosemary, sugar, a lemon and orange. 

Start by making the simple syrup by adding rosemary, sugar, orange and lemon juice, and orange zest to a sauce pan and bring to a boil.

Reduce to a simmer, stir, and cover for 5 minutes. Remove from heat and strain, let cool 5-10 min.

Grab an 8-ounce glass and fill with ice. Next add some of the simple syrup and the remaining ingredients; then stir. 

For a non-alcoholic version, replace the champagne and Limoncello with sparkling water, seltzer and lemonade. 

What else can you make with limoncello?

I've made several recipes over the years with Limoncello. Some sweet like Limoncello Cheesecake, an Italian Sangria and even in a pasta dish with cream sauce.

Ingredients
  

For the Rosemary Limoncello Spritzer

  • 1 ounce limoncello
  • 1 ounce vodka
  • 1 ounce coconut water
  • 2 ounces champagne
  • Prepared Rosemary Simple Syrup

For the Rosemary Simple Syrup

  • 1 sprig fresh rosemary
  • 2 tablespoons granulated sugar
  • 1 orange, zest and juice
  • 1 tablespoon lemon juice
