I just love this quick and easy recipe for Ravioli with Spinach Pesto. A typical pesto is made with basil, pine nuts, garlic, cheese and oil.
However, in this version I made the pesto with fresh baby spinach, garlic, pine nuts and Asiago cheese; which takes just minutes to prepare. Use frozen or fresh ravioli and dinner is ready in no time!

Italian Sausage & Peppers in a White Wine Sauce
I seriously can't get enough of these Italian Sausage & Peppers in a White Wine Sauce. Now that it's grilling season, try grilling the sausage first before slicing instead of roasting them for a smokey flavor.
This recipe makes quite a bit, but it tastes even better reheated as leftovers or freeze the rest for when school starts up again.
