I just love this quick and easy recipe for Ravioli with Spinach Pesto. A typical pesto is made with basil, pine nuts, garlic, cheese and oil, but in this version I made the pesto with fresh baby spinach, garlic, pine nuts and Asiago cheese which takes just minutes to prepare. Use frozen or fresh ravioli and dinner is ready in no time!

Suggested Sides: Tossed Salad

Tuesday: Grilled Chicken with Summer Fruit Salsa

Grilled Chicken with Summer Fruit Salsa

This Grilled Chicken with Summer Fruit Salsa made with fresh peaches, mangoes and tomatoes is guaranteed to be a new Summer favorite.

Suggested Sides: Stuffed Zucchini Boats

Wednesday: Italian Sausage & Peppers in a White Wine Sauce

Italian Sausage & Peppers in a White Wine Sauce

I seriously can't get enough of these Italian Sausage & Peppers in a White Wine Sauce. Now that it's grilling season, try grilling the sausage first before slicing instead of roasting them for a smokey flavor. This recipe makes quite a bit, but it tastes even better reheated as leftovers or freeze the rest for when school starts up again.

Suggested Sides: Tossed Salad and/or Pasta

Thursday: Portobello Mushroom Sandwiches with Fresh Mozzarella, Tomato & Basil

Portobello Sandwiches with Fresh Mozzarella, Tomato & Basil

If you have 15 minutes, then you can make these deliciously simple Portobello Mushroom Sandwiches with Fresh Mozzarella, Tomato and Basil topped with aged Balsamic vinegar. Not only are these sandwiches incredibly flavorful, they satisfy any level of hunger as well. This sandwich is perfect for lunch or serve it for a quick weeknight dinner.

Suggested Sides: Buffalo Roasted Potato Wedges

This Soy-Ginger Grilled Flank Steak is marinated in fresh ginger, ginger, soy sauce, and brown sugar; then grilled to perfection. A must-try on your summer grilling list and a perfect way to start your weekend.

Suggested Sides: Wasabi Cheddar Twice Baked Potatoes and Soy Sauce Roasted Green Beans
