Lighten up one of your favorite Italian meals with this recipe for Low Fat Black Bean & Sun Dried Tomato Lasagna made with 1% cottage cheese and part skim mozzarella cheese. At 212 calories per serving, it's so flavorful, you won't miss the extra calories.

Suggested Sides: Tossed Salad and for dessert try some Amaretto Macerated Berries on top of angel food cake.

Tuesday: Beef & Green Bean Stir Fry

Beef & Green Bean Stir Fry

Utilize leftover roast beef or steak by cutting the meat into thin strips, steam fresh green beans; then tossed them together with some garlic, soy sauce, sesame oil, rice wine vinegar and sesame seeds. Beef & Green Bean Stir Fry is ready in under 30 minutes and is so good!

Suggested Sides: Rice and Creamy Asian Root Vegetable Soup

Thursday: Chicken Gnocchi Soup

Chicken Gnocchi Soup is my copycat version from Olive Garden restaurants and is one of my family's absolute favorite soups to eat. It's also one of the most popular recipes on my blog to date and no wonder, it's so deliciously filling, you can eat it for dinner.

Suggested Sides: Copycat Olive Garden Breadsticks and Copycat Olive Garden Salad with Dressing

Friday: Mediterranean Turkey Sliders with Horseradish Dressing

Mediterranean Turkey Sliders

Mediterranean Turkey Sliders made with flavors like garlic, lemon, Feta and oregano really gave it a robust flavor; not to mention the little kick from the Horseradish Dressing and the sweetness from the Kings Hawaiian rolls. The family devoured these; even the little one who doesn’t particularly care for ground turkey. I personally think it was because they were so cute too!

Suggested Sides: Buffalo Roasted Potato Wedges and Greek Salad
