It's that time of year when bbq's, graduations and Patriotic celebrations are in full force. These Cheeseburger Crostini make the perfect appetizer in keeping with the grilling theme, are easy to make and super tasty!
When our youngest daughter graduated high school in 2020 at the height of the pandemic; we still wanted to celebrate. So we had two small outdoor gatherings of less than 20 people; one for family and one for friends.
During the friend party, we spaced out tables and set up appetizer sized portions of food so that her and her friends could just grab and eat.
One of the things I made for them were mini cheeseburgers on slider rolls. I never took pictures of the sliders, but then thought making the portions even smaller might make a great appetizer to serve as well.
These Cheeseburger Crostini were delicious and everyone devoured them! This recipe makes 12 appetizers, but can easily be doubled and tripled by using the sliding bar in the recipe card below.
What is crostini?
Crostini are thin slices of bread that have been brushed with oil; then and toasted. You can top a crostini with just about any combination you like. They're quick and easy to make, can be served hot or cold and make a tasty appetizer.
Some of our personal favorite recipes to top crostini are Bruschetta, Olive Tapenade, Eggplant Caponata and Pesto and Goat Cheese Crostini.
Equipment
Ingredients Needed
For this recipe you'll need the following ingredients:
French Bread: French bread is narrower than Italian bread; which makes it the pieces smaller and better for bite-sized appetizers. Depending on the size, you may not need the entire loaf.
Cooking Spray
Garlic Powder
Ground Beef: I used extra lean ground beef, but you can substitute ground chicken or turkey.
Shredded Cheddar Cheese: To make this recipe easier, I added the cheese is in inside of the burger. You can top with a piece of your favorite cheese after the burger is cooked if you prefer.
Adobo Seasoning
Ketchup: I added a little ketchup to the burger to help keep it moist.
Kosher Dill Pickle Slices
How do you make Cheeseburger Crostini?
Step 1. Toast the Bread
Preheat the oven to 375 degrees F. Slice the bread ½-inch thick into twelve rounds; then lay flat on a baking sheet.
Spray the tops with cooking spray; then sprinkle the tops with garlic powder. Place the pan in the oven and cook 3-5 minutes until the bread is slightly toasted. Remove from oven and allow to cool.
Step 2. Make and Grill
Add the ground beef, cheese, ketchup, and adobe seasoning to a bowl; then mix well until blended. Form twelve burgers using a tablespoon; then flatten them out into round discs.
Heat a grill pan on top of the stove over medium high heat; then add the cheeseburgers and cook 5-6 minutes; flipping halfway until cooked through.
Because these burgers are so small and cook super quick, I found cooking on an indoor grill pan easier than using my large outdoor grill.
Step 3. Assemble
Lay the toasted bread on a serving platter; then top each round with a cooked burger and top with a slice of pickle.
Suggested Toppings
You can make the crostini and either top with your favorite condiment or put a few choices for people to add themselves.
Here are a few suggestions:
- Ketchup
- Mustard
- Mayonnaise
- Thousand Island Salad Dressing
- Chick-Fil-A Sauce (what we used on ours!)
- Lemon Garlic Aioli
- Sriracha Lime Aioli
- Sun Dried Tomato Dijonaise
- Garlic and Cheese Dip
Party Appetizer Serving suggestion
If you're serving these for a party, you can make the cheeseburgers up to 1 day ahead of time; then store in the refrigerator until you're ready to assemble.
You can also toast the bread; then when completely cooled store them in a resealable plastic bag.
When you're ready to assemble you can either microwave the burgers in 30 second increments until warm or place them on a sheet pan and reheat in a preheated 350 F degree oven for 10-12 minutes.
Assemble the crostini as directed; then place them in a steam table over a heated chafing dish.
